Recipe: Fruitcake Slice Cookies

Fruitcake Slice Cookies are a beautiful addition to your Christmas Cookie platter.  Rather than the heavy, dark, spicy flavor one expects from a true fruit cake, these cookies are instead more of a cross between a shortbread and a butter cookie with little jewels of candied fruit embedded throughout.

Fruitcake Slice Cookies

Ingredients

  • 1 C butter softened
  • 1 C powdered sugar
  • 1 egg
  • 2 1/2 C all purpose flour
  • 1/4 tsp cream of tartar
  • 1 1/2 C candied fruitcake fruit
  • 1 tsp almond extract

Instructions

  1. In a mixer cream together butter, powdered sugar, almond extract and egg.
  2. In another bowl mix flour and cream of tartar.
  3. In the mixer, slowly incorporate flour mixture to creamed butter mixture slowly until dough forms.
  4. Add in fruitcake fruit.
  5. Divide mixture in half and roll (in wax paper) into a 2" log.
  6. Refrigerate for 2 hours
  7. Preheat oven to 375 degrees.
  8. Cut logs into 1/2" slices and place on baking sheets. They do not spread, so they can be placed fairly closely.
  9. Bake for 12-14 minutes or until light brown.

    Perfect timing! I have a large container of fruitcake mix as well as several mini containers of different candied fruit peels that I need/want to use up. My traditional fruitcake eaters are no longer in my household, so finding an alternative way to use what I have in the pantry is great, thanks for sharing this recipe.
