Looking for something a little different to do with your potatoes? Try this classic German Potato Salad, which is served warm. It’s got a slightly sweet & sour taste to the warm dressing, and of course the delicious kick of bacon!
Ingredients
- German Potato Salad
- Ingredients:
- 6 C peeled, cooked potatoes
- 1/3 lb Bacon (approx 6 strips)
- 1 medium onion
- 2 TBS Flour
- 2/3 C Vinegar (cider preferred)
- 1 1/3 C Water
- 1/4 C sugar
- Salt & Pepper
Instructions
- Fry bacon until crisp. Remove & leave drippings in pan.
- Dice onion & cook in the bacon drippings until soft.
- Stir flour into onion/dripping mixture. Ensure it's blended well-no lumps!
- Add vinegar and water to mixture and cook until thick and bubbly.
- Add sugar and stir.
- Crumble bacon and slice or cube potatoes.
- Fold bacon and potatoes into warm dressing.

I’ve found that cooking the (scrubbed) potatoes in their skins then peeling gives a better flavor.

Julie~well of course it depends on how big a serving each person takes. But with 6 cups of potatoes 6 people could have a 1 cup portion, which would be a pretty big helping of potato salad!
love this one too!! I’m not a fan of the mayo based salads but I love German potato salad!
