Spaghetti Pie

Here is a great frugal recipe to rework leftover noodles into a different dish.

Spaghetti Pie

2C Pasta (leftover)
1 Egg, beaten
1/4C breadcrumbs (homemade is the most frugal)
1 small container Ricotta Cheese (or the more frugal Cottage Cheese)
1 Jar Spaghetti Sauce

Mix together egg, noodles and breadcrumbs.
Press spaghetti mixture into an oiled pie plate & bake at 350 for 10 minutes.
Remove from oven, layer ricotta cheese & spaghetti sauce on top of “crust” and return to the oven for another 25 minutes.
Serve in slices.

Variations:
Sprinkle shredded Mozzarella cheese on top.
Add Italian seasonings into the spaghetti mixture.
Add a sprinkling of sauteed vegetables or meat (leftover bits & pieces work well for this).
