Walmart Meal Soultions & Recipe: Minestrone

It’s time to talk about Walmart’s Meal Solutions again! That’s when Walmart highlights the ingredients for a quick and easy weeknight meal. This week’s meal is a quick and easy Minestrone.

All the ingredients for Minestrone

The highlighted ingredients are:

GV Chicken Broth 14.5oz
GV Diced Tomatoes 14.5oz
GV Dark Red Kidney Bean 15.5
GV Elbow Macaroni 16oz
Kraft Zesty Italian Dressing 16oz
GV Grated Parmesan Cheese 8oz

Now I’m sure many of you have fantastic completely from homemade minestrone recipes. . . but believe it or not Minestrone is one of those things I’ve never made from scratch.  I’m not sure why.  So I decided to go ahead and try it with the quick and easy recipe that Walmart provided.  It turned out to be very tasty!  Quick, easy, cheap & tasty. . . got to love that!

Just cook for 20 minutes!

Minestrone Soup

2 cans chicken broth
1 can  kidney beans, drained
1 can diced tomatoes, undrained
2 cups  Frozen Italian-style vegetable blend
1/2 cup Elbow macaroni, uncooked
1/4 cup  Zesty Italian Dressing
1/4 cup Grated Parmesan Cheese

Delicious soup

Doesn't that look delicious?

-Combine all ingredients except the cheese in a large saucepan and bring to a boil.

-Reduce heat and simmer 8-10 minutes until macaroni is soft.

-Serve hot & sprinkle with Parmesan cheese.

This actually looks very delicious! I’m not a big minestrone fan… not sure why except maybe because I don’t care for pasta in soup, but this definitely looks worth a try. Thanks!

I may give it a try with the Great Value brand frozen cheese tortellini… THAT sounds good!

I made this on Sunday (with a couple of pantry revisions to avoid a trip to the store–Stewed tomatoes and grean northern beans plus I added fresh garlic and a healthy dump of italian seasoning) and it was well liked by the family. Super easy and tasty!

So glad you liked it! I thought using the Italian dressing for flavor gave it a nice zip!
