It’s time to talk about Walmart’s Meal Solutions again! That’s when Walmart highlights the ingredients for a quick and easy weeknight meal. This week’s meal is Fiesta Chicken and Rice.
This recipe had a new ingredient for me-instant brown rice. Now I was a little skeptical about this-if it’s instant, does it still have the health benefits of brown rice? Is there anything added? So I checked the side panel of the box-the only ingredient was rice. It still had 2 grams of fiber per serving, which is decent (although I’m suspicious that regular non-instant brown rice might have more).
The recipe itself was simple:
Fiesta Chicken & Rice
12 oz. chicken
1 Tbsp. canola oil
1 can Diced Tomatoes
1 can Corn
1 can Carrots
2 tsp. chili powder
1 tsp. ground cumin
1 cup Chicken Broth
1-1/2 cups instant brown rice
1. Cut up chicken and cook with a little salt, pepper and garlic powder, or use precooked leftover chicken.
2. Stir in undrained tomatoes, corn, carrots, chili powder, cumin and broth. Make sure your pot or pan is big enough for all this!
3. Bring to a boil and stir in rice.
4. Cover and simmer 5 minutes.
That’s it. Fast, easy & yummy. Princess & I really liked this. Buddy, who is suspicious of anything appearing to be Mexican tried his obligatory bite and then asked for PB&J.

Hi Jenn, 🙂 I’ve tried the instant brown rice and found it really easy and very tasty. May not be completely as great as the original, but better than white I’m thinking. And on crazy days when caring for elderly parents and babysitting grandchildren keep me too busy to spend much time cooking, it really comes in handy.
