Walmart Meal Solutions: Santa Fe Chicken Tortilla Soup

It’s time to talk about Walmart’s Meal Solutions again! This is the segment where I tell you what meal Walmart is highlighting for a quick and easy weeknight meal.  This time the grab & go meal at Walmart is Santa Fe Chicken Tortilla Soup.

All you need to make the soup-and dessert

GV 12.5oz Chicken Breast $1.96 lb
GV Chunky Mild Salsa 24 oz $1.99
GV Chicken Broth 32oz $1.27
Del Monte Whole Kernel Corn 15.25oz
Santitas White Corn Tortilla Chips $1.98
Betty Crocker Chocolate Chip Cookie 17.5oz $1.72
Now most of these times I take the meal solution as it is written and twist it around a bit to fit my family’s lifestyle.  Since I had never actually made Santa Fe Chicken soup before, I decided to just go ahead and make it as written (see recipe below).

I was pleasantly surprised.  This recipe needed no twisting.  It is a super simple, super tasty, dump it and go type of meal that I will use again and again.  The whole family enjoyed it just as is.  I could even see bringing it along for camping trips, or sending it to deer camp with Yankee Bill in the fall.  It’s that easy.

Of course you can substitute in leftover cooked chicken for the canned chicken breast (I don’t usually keep that on hand) and you can use your own chicken stock/broth and homemade salsa (or even just canned diced tomatoes with chilies), ou could dump it all in a crockpot and let it go all day. . . but it is basically the same thing.

I’m telling you all-try this recipe.

Mmmm. Soup.

Santa Fe Chicken Tortilla Soup

1 can chicken breast, drained or 1 cup cooked chopped chicken
1 can of mild salsa
1 can whole kernel corn, drained
3 cups of chicken broth

Garnish:
Coarsely crushed tortilla chips
Shredded cheddar cheese

Directions:

Combine all ingredients and bring to a boil.  Reduce heat  and simmer 5 minutes.

To garnish place about 1/3 cup tortilla chips in the bottom of each bowls.  Ladle the soup over the chips and sprinkle with cheese.

Delicious. I didn't even bother adding the cheese.

Great idea. I’ve been on a tortilla soup kick, myself. I like to take a few tomatoes (yeah, not seasonal, but sometimes Sams and or Costco sings the siren song, know what I mean?). Quarter and drizzle with olive oil. Toss in your stainless steel skillet w/ a few garlic cloves and a quartered onion. Slap that bad boy under the broiler until the edges of everything turn brown (not black, never black). Then puree that into your chicken broth, add a squeeze of lime, your chicken, cilantro, and top with sliced avocado.

Well, I think I know what’s for lunch now. ;)

Sounds like a great way to use up the crumbs of the chip bag that always exist or even fry up 3-4 corn tortillas, chop and add. I love finding new ways to recycle those little bits of food everyone is always stuck with!
