Roasted Red Pepper Hummus

Ingredients

  • 1 can Chick Peas
  • 1 Red Bell Pepper
  • 1 small head Garlic
  • 1/4 tsp Salt
  • 1/4 C Tahini
  • 4 TBS Lemon Juice
  • 2 TBS Olive Oil or more to taste
  • Pinch of Cumin
  • Pinch of Pepper

Instructions

  1. Roast pepper over a gas burner and then peel. Remove seeds and stem.
  2. Place all ingredients (Chickpeas, Roasted Pepper, Garlic, Salt, Tahini, Lemon Juice, Olive Oil, Cummin and Pepper) into a food processor and pulse until completely combined. Scrape down sides of processor as necessary.
  3. Serve with crackers, pita bread, chips, vegetables, or on a sandwich.

Variations:

  1. Leave out the pepper and make plain hummus.
  2. Roast the garlic for a more mellow taste.
  3. Reduce the amount of Tahini for a less nutty flavor.
  4. Substitute peanut butter for Tahini.
