Honestly, I don’t know how I’d survive if I didn’t have a menu plan during these hectic fall weeks!
Monday:Â Spaghetti and Meatballs and a Green Salad
I found a big bag of meatballs I had made and frozen while excavating things from the freezer on Saturday. . . I figured I better use them up before I forgot about them again!
Tuesday:Â Venison Stir Fry with Rice
Thinly sliced venison loin marinated in Teriyaki sauce and then stir fried with a bag of frozen veggies, served over rice. I call that dinner!
Wednesday: Wanna-be Wendy’s Chili, Green Beans & Cornbread
It’s been cold & dreary lately-which just screams “chili” to me. I love the recipe for Wanna-be Wendy’s Chili, so I’ll start a big crock pot full in the morning, and dinner will be ready to go when I get home from my weekly run into the “big city” for errands.
Thursday: Brown Rice and Lentil Casserole, Crockpot Collard Greens & Dinner Rolls.
This is my vegetarian meal for the week. I am branching out from my normal Lentil Casserole and trying a new version-hope the family likes it! I have some big collard plants out in the garden still-so I’ll cook them up in the crockpot with a bit of bacon (yum!) and make a batch of dinner rolls in the breadmaker.
Friday: Pizza Night
I will have about 6 screaming 9yr old girls over for pizza and a movie on Friday night. At least they aren’t all spending the night!
Of course I’ll use the Pizza Hut Crust Clone. I plan on making all the crusts (personal sized) a day or two ahead of time and par-baking them so that it won’t be complete chaos when it’s time to make the pizzas.
Who am I kidding? It will be complete chaos anyway.
Saturday:Â Fish & Corn Chowder, Cabbage Salad & Impossible Beer Bread
My favorite thing about the weather turning to fall? I can start eating all those yummy soups & casseroles again! No one wants to eat a steaming hot bowl of chowder in August-but in October it just sounds fantastic, doesn’t it? Pair it with a homemade cabbage salad (since I’ve still got a couple of cabbages in the garden) and some Impossible Beer Bread and you’ve got a meal fit for a king. Well, maybe a duke.
Sunday:Â This and That Curry over Rice
This will be a “clean out the fridge & use up whatever is left” style curry. That’s why I call it “This and That Curry“. Don’t you just love those?

Good morning Jenn! I’m not sure if this would be helpful, but a friend of mine threw her daughter a “make your own pizza” party. There were about 10 kids (plus adults) and everyone got a portion of crust that they rolled out (by hand or with a provided small rolling pin), and then they put the toppings on themselves. The kids had a blast, and it was much less chaotic than having to make the pizza while the party was going on.
