Welcome to the week after Christmas! Its sort of a weird week every year-bracketed by Christmas and New Years, the kids are home, the schedule is loose and it’s hard to figure what to feed folks! Added into my planning is the fact that my Mom is visiting right now then my Dad was supposed to fly in today from my sister’s, but instead his flight got canceled. . . Lots of fun. .
So here we go!
Monday: Eating Out
My mom insisted that she has to take us out to eat.
Tuesday: Meatloaf, Carrots and Mashed Potatoes
I’ll mix sausage and ground beef for a delicious meatloaf to serve with carrots I canned from our garden and homemade mashed potatoes. It’s a homestyle feast!
Wednesday: Lasagna & salad
Not only does everyone seem to love lasagna (I even splurged & bought some real ricotta cheese!) but it’s easy to prepare ahead and then pop in the oven later. Round it out with some salad and maybe some garlic bread and you are in business.
Thursday: Salmon Patties, Steamed Broccoli and Rice Pilaf
I actually don’t know if my dad has ever had Salmon patties-but we splurged again and bought the real canned salmon (I usually fudge it with tuna-different flavor but cheaper & still yummy)-with a bit of Cajun Hollandaise sauce on top they are delicious! I think Dad will like them.
Of course! Depending on our New Years plans is whether or not we make homemade or order in.
Saturday: Crockpot Chicken Tetrazini with Green Beans
Yankee Bill and I have a wedding to attend for a dear friend on Saturday night-so I’ll fill up the crockpot with my Crockpot Chicken Tetrazzini recipe and make it an easy supper for the babysitter to serve-with plenty of delicious leftovers for later!
Sunday: Green Chili Chicken Lasagna, Mock Spanish Rice and Salad
Green Chili Chicken Lasagna is another tasty comfort food that I haven’t yet pulled out this season. The mock spanish rice is just rice cooked in the cooker with tomato juice, onion & green chilies. Yes, I know it looks like I’ve planned lasagna twice in one week-but the first is very Italian, where this one tastes more like a chicken enchilada 🙂
