I’m sick. I feel like someone stuffed my head full of cotton. Blech.
But still-the family must eat and food isn’t just going to appear on the table, so I’m planning a quick menu for the week. I’m also experimenting with Ham this week-since a reader over on the Frugal Upstate Facebook page, Shannon, asked me if I ever considered “stretching a Ham” like I had done with my Stretching a Chicken Post.

Anyway, I bought a ham (a normal family sized one, not a mammoth huge one) and will be seeing how many meals I can get out of it this week.
Starting tomorrow.
Because tonight everyone is going to deal with “mama’s not feeling well so you all get soup and sandwiches for dinner”.
Monday: Soup & Sandwiches
I don’t feel up to anything more.
Tuesday: Ham, Mashed Potatoes and Carrots
This will be the first meal with the ham-just baked and served in slices with mustard. The potatoes may be home made or may come out of a box. Depends. And the carrots are canned from our garden.
Wednesday: Ham Fried Rice and Steamed Oriental Vegetables

Thursday: Creamy Ham Potatoes with Salad
Creamy Ham Potatoes is a quick and filling crockpot meal. All that needs to be done at supper time is to make a quick salad to go on the side. If I’m feeling fancy I may make some fresh hot biscuits.
Friday: Ham and Pineapple Pizza
Because I need to use the ham and I can’t leave out my Pizza Hut Crust Clone pizza!
Saturday: Pea Soup and Homemade Rolls. . . Carrot Cake Birthday Cake for Dessert.
I love love love pea soup! So does my mom-who will be visiting for her Birthday. And there is nothing like a good meaty ham bone to make your pea soup taste delicious. While that simmers away in the crockpot all day, I’ll get a batch of bread dough going in the bread machine to make rolls. And since we’ll be celebrating Mom’s Birthday, I’ll have to make her favorite cake-carrot!
Sunday: Dinner Out
As much as I tell her it is unnecessary, my mom always insists on taking us out to dinner when she visits. Who am I to argue?
