Menu Plan Monday 11/15

Time for another week’s menu plan!

Monday:  Spaghetti and Meatballs with Salad

I’ve got frozen Venison meatballs in the freezer that I should be using.  I’ll pair them with jarred sauce for a quick and easy supper.  Salad and canned veggies on the side will round it out.

Tuesday:  Turkey, Roasted Brussel Sprouts and Rice

I bought a turkey for the “Trim your Budget” challenge.  Since I’ll be heading to my mother in law’s for Thanksgiving, I figured I might as well cook up that turkey now.  I”ll freeze the extra meat in meal size portions and make stock from the bones.  The Brussel sprouts are still in the garden.  I’ll make a pot of rice to go on the side.

Wednesday:  Chicken Chili Blanco

It’s been a long time since I”ve made my favorite white chicken chili recipe!  Of course I’ll be using turkey instead of chicken-but what the heck! Poultry is poultry as far as I’m concerned.  I’ll make a large batch and freeze some for future lunches.

Thursday: Blue Cheese Burgers, Oven Fries & Coleslaw

Last time I made Blue Cheese Burgers I made a double batch and froze them-so practically an instant meal!  The oven fries just have to be wedged and dredged about an hour before dinner and stick them in the oven.  The coleslaw will be from one of the few remaining cabbages in the garden.

Friday: Homemade Calzones

Using the Pizza Hut Crust Clone recipe of course. . .

Saturday: Going Out

The guys are gone to Deer Camp-so the wives are on their annual “Heck with them, we’ll go Christmas shopping” trip.  The kiddos will have chicken nuggets with the babysitter.

Sunday:  Leftover Buffet

Time to get rid of all that weekly buildup!  We’ll either use the leftovers as a meal, or I’ll re-purpose the bits and pieces into fried rice.
