No Meal Plan, Well Kinda

So this week there is practically no meal plan.  I am heading out on a trip tomorrow afternoon and Yankee Bill, with help from my mom, is holding down the fort here in Upstate NY.  I offered to buy some frozen meals and leave them, but my mom insists that she wants to cook and for me not to worry about it.  I just love moms!

I have very few considerations for this week.

1.  I only have to plan meals for Monday, Saturday and Sunday.  That’s pretty easy!

2.  I went ahead and froze the unused boneless chicken breasts (which I need to can anyway) and the homemade turkey soup stock.  We’ve eaten up quite a few leftovers this weekend, so I really don’t have too much to use up before I go–just a couple of scallops, a piece of steak and a tossed salad from our big meal on Saturday.

3.  I’m not going to worry about my goals for this week.

Monday:  Steak, Scallop & Corn Chowder

This is the most expensive pot of soup all year long!  When we have our big surf and turf dinner, whatever is left over gets made into delicious chowder!  I’m adding some home canned corn to bulk it up a bit, since we really didn’t leave a ton of scallops or steak–they were just too good.

Tuesday-Friday:  I don’t have to worry about it!

Saturday:  Homemade Pizza

Since I won’t be home to make pizza earlier in the week, I’ll make it on Saturday instead, using the Pizza Hut Crust Clone recipe of course.

Sunday:  Venison Stirfry with Rice

This is just such an easy meal for me to whip up with whatever is on hand.
