Monday: Chicken Cheese Quiche with Rice Crust, Garden Salad
I really desperately need to go grocery shopping. I have run out of all sorts of necessities-but for various reasons will not be able to go until tomorrow (Tuesday). Therefore I must create a meal out of what I have in the fridge/freezer. So the cup and a half of cooked rice (to make a rice crust), leftover chicken (frozen & a tad bit freezerburned) eggs and smidgen of shredded cheese will create a quiche. The garden salad will truly come from my garden. I’ve got all sorts of greens up, as well as some cukes!
Tuesday: Ridiculously Easy Crock Pot Roast, Mashed Potatoes & Sauteed Mizuna
I’ll be out shopping from noon when I pick the kiddos up from camp until who knows when. It will be a good thing to have dinner all cooked up in the crockpot and just have to add some instant taters and quickly saute the Mizuna from the garden. Actually, I’ll have to pick & clean it in the morning so it IS just an easy toss into the pan sort of thing.
Wednesday: Taking Buddy out to Dinner
Our kids get a special treat on their birthday week-they get to go out to dinner at the Japanese Hibachi Steakhouse (or other restaurant of their choice). This is not an inexpensive option~but the kids love it Trust me, the onion ring volcano is a big hit-especially for a 6 year old boy! Poor Princess will have to suffer through with leftovers.
Thursday: Family Sub with Coleslaw & Chips
Since attending the State of the Sandwich Summit I realized that a big family sized sub sandwich can not only be quick, easy and cool-but also very tasty! The kids always love it when we have a dinner sub, so I will try to work it into the rotation more frequently.
Friday: Relay for Life
Will grab McDonalds with the kiddos then head to the track to help raise money for Cancer Research. If you’d like to contribute you may on my Relay for Life webpage.
Saturday: Homemade CornDogs, Garden Salad & Couscous
I’ll let the kiddos help with dipping the hotdogs into the batter, which will make for a very messy, if paticipatory dinner.
Sunday: Asian Chicken Lettuce Wraps & Rice
This is a fun meal to make with the kids! It’s sort of like making a taco but using a lettuce leaf (fresh from the garden) instead with various shredded & lightly steamed vegetables and marinated chicken strips. Let’s face it-anything with “at the table assembly” will thrill the kids.

awww! Princess doesn’t get to go?
We just did this for our boy last week. He turned 4 on the 7th. Whoever has a birthday, gets treated to a night at the hibachi steakhouse. Ours frequently puts out coupons AND sends us a birthday coupon for each member of our family, so it make it less expensive. I think we spent around 30 dollars(before tip) last week. And we ALWAYS have doggie bags. That yields 2 lunches during that week.
You’re right…the onion volcano is the highlight for little boys lol.
Buddy didn’t get to go on Princess’s B-day, so she doesn’t get to go on his. Let’s face it, having the evening alone with both parents giving you their full attention is even more exciting than the Onion Volcano. . .
