Menu Plan 7/28

Yes, I realize that it is Tuesday.

There was a bunch of bloggy chaos yesterday and my menu plan did not get done.  I am happy to be back on track and back in control though!  I know it’s cliche, but I feel so much more organized with a menu plan in place.

Monday: Garden Salad w/Tuna Salad

This was a quick and easy toss it together dinner!  Honestly, I had no idea what I was serving until about 15 minutes before dinner. See what happens when I have no menu plan?

Tuesday:  Fried Rice

There are lots of veggies that are starting to look, well, sad after having sat in the fridge while I was gone.  I’ll make a pot of rice and mix up the veggies, rice, leftover fried egg & meat (my kiddos don’t always eat all the egg-hey, it will be cooked again so don’t worry about germs) and all the spices etc to make fried rice. Quick, easy, and most of all frugal!

Wednesday:  Venison Spiedies, Marinated Tomato Cucumber Salad and Macaroni Salad

Spiedies are sort of a hyper local shiskebab* type thing.  Really, you go outside about an hour radius and no one has heard of them.  It’s the marinade. . .

Thursday: Quiche and a Salad

I’ll make a rice crust from the leftover rice (Tuesday’s meal) and then do a cheese & veggie quiche.  The lettuce is starting to bolt, so some of that needs to get in there as well.  If there is any leftover macaroni salad, that will be served on the side as well.

Friday: Chicken Parmesan Bake, Beets & Mizuna

A couple of weeks back I made, cooked and froze breaded chicken cutlets. You know, the kind you pound flat with the mallet first?  Well, I used them fresh the night I cooked them-they were fantastic.  Then I put them on a cookie sheet to flash freeze them before sticking them in a freezer bag and, um, well, I forgot about them.

For almost a week.

So although they actually don’t have freezer burn, then are pretty dry (which I found out when I used them for dinner one night).  I think that if I take the cutlets, place them on top of cooked pasta & cover them all in spaghetti sauce, sprinkle with cheese and cook them on low they will sort of rejuvenate.  I will serve this “casserole” with sauteed Mizuna from the garden and garden fresh cooked beets.

Saturday: Mac ‘n Cheese, Tomato Soup and a Garden Salad

Saturday is the Spiedie Fest in Binghamton. Yankee Bill shows one of the cars, I bring the kids later and we do all the “stuff” and buy delicious yet over priced fair type food. Everyone is happy and exhausted.  By the time we get home, I’m not going to feel like cooking anything complex.  I’m going to use some of the Kraft Mac ‘n Cheese I got for hosting the giveaway. The soup is from Aldi’s and the salad is from, well, the garden.

Sunday: Homemade Pizza

With the Pizza Hut Crust Clone of course!  You know, before I went on my trip we ordered out pizza from the local place.  We rarely do that! They have very good pizza, but Buddy told me afterward that he likes my pizza better 🙂

*Don’t mess with me on the spelling I got shiskebab, Shish kabob & Shish kebab and had to make a totally arbitrary judgement call.

    little known fact: shish kabob actually means “lamb stick”. the “shish” part means lamb, so unless its made from lamb, you don’t have to say(or type) that part. Another cocktail party useless fact from me 😀

    also, i’ve heard of(and tasted) spiedies. And i’m over an hour away from you ;). Yum!

    Shish does not mean lamb. Shish means skewer. Shish Kebap actually means meat grilled on a skewer.

    I am Turkish so I know. Kebab (in our case kebap) is any kind of meat that is cooked on a grill. Since lamb is tender, most people prefer lamb for kebaps but, chicken, all sorts of red meat, some fish and veggies can be cooked on a shish. They will all be called shish kebap.     Great ideas for dinners- thank you so much for sharing. We decided to make the pizza last night to make up for being gone during BlogHer. Some traditions just can’t be pushed aside 🙂

    T’Pol,

    so sorry for saying the wrong information. I was always told by middle eastern friends(and when I’ve gone overseas to Turkey and other middle eastern countries for the military) that shish refers to lamb, so calling a beef kabap or kabob “shish” is a no-no. But hey, i’m not Turkish like you are so i’ll leave it at that.
