Reader’s Question: Turning a Bread Machine Recipe into a Handmade Recipe

When I posted my Hotdog and Hamburger Bun Recipe last week I got the following question from Leslie who blogs over at “27 and Frugal”

Can someone turn this into a real recipe? I still make my bread the old fashion way 🙂

I tried to do some research online-but to be quite frank, I’ve got a really bad cold, feel sick and listless, and just couldn’t pull it together today.  I thought I’d put out a plea for help to you all-Does anyone have a tried & true method for converting a bread machine recipe into a handmade, hand kneaded recipe?

There is advice about this topic at http://www.thefreshloaf.com/node/12858/converting-bread-machine-recipes-back-hand-kneaded and more general info about it at http://allrecipes.com/HowTo/Bread-Machine-Baking-Tips-for-Experimenting/Detail.aspx under “Adapting a Bread Machine Recipe to a Manual Recipe.”

The recipes for bread dough are the same whether you’re making it in a bread machine, kneading it with a Kitchen Aide or kneading it by hand. You might just have to add a little more flour if it’s too sticky to handle by hand.

I made the recipe without modification without a machine and it was great.
