Snowstorm and Baked Beans!

Yes, we’ve gotten at least 2 inches in the last 2 hours here in the “Southern Tier” of Upstate NY. Our school district was one of the only ones around that didn’t cancel school, so princess went to nursery school this morning. The school district is getting out at noon-princess will be picked up at her normal time.

The stores are apparently being overrun, as usual, with people freaking out and stocking up on bread and milk. Luckily for me, dh stopped and picked up bread and milk at Save-a-Lot last night. I didn’t even know a snowstorm was coming, we were just out of bread and milk 🙂

Because of our well stocked freezer and pantry, I’m fine even if we were not able to get to the store for a while. After all, I only go shopping somewhere between once a week to once every other week. (and that is mostly because we go through the milk-Buddy loves to drink milk. Princess on the other hand is fine with just water.)

I had planned a very hot, filling and frugal meal for dinner tonight before I even knew about the snow. Homemade Boston Baked Beans (using the recipe at Hillbilly Housewife) with some hotdogs cut up in them (leftover from lunch yesterday).

Here is the cost breakdown:

Beans-2 lbs dried-$.59 ea at Save-a-Lot
Salt-2 tsp-$.25 for large canister at Save-a-Lot, approx $.01 for recipe
Molasses-1/2c-$1.98 per bottle-$.62 for recipe
Brown Sugar-1.2c-$.89 per bag at Save-a-Lot-approx $.10
Hotdogs-$.59 per pk Save-a-Lot
Onion-1ea-10 lbs for $4.99 at Save-a-Lot, approx $.20
Mustard Powder-2tsp-cost unknown (I’ve had it a while)

Comes to a grand total of $2.71 for the recipe-which makes 2/3 of a very large crockpot full of beans. Thats at least 2 full meals for my family. Yes, I’ll probably make some bread or biscuits to go with it (from bulk ingredients the cost will be negligible for that too), but still, it is a wholesome, hot, filling and cheap meal!

    My mother used to make the most amazing baked beans. Unfortunately, I can’t eat beans any more because of my stomach. Alas–no more burritos, either! (At least, not with beans!)

    I haven’t had homemade baked beans in forever. But I do love homemade pea soup, beef-barley soup, and chili. All are rather cheap for ingredients and give you a ton of servings.
