Next week will be a full menu plan, I promise! Travel has messed with my planning process again.
This week’s menu plan:
Tuesday: Trout, Green Beans and Rolls
I’ve got a lovely large trout my brother in law caught this summer in the freezer. Baked w/ some butter, a side of green beans and rolls. Life is good.
Wednesday: Ham Slices, Boiled Potatoes, Greens
After Easter I bought 2 extra hams at bargain prices. I sliced them up and froze them in meal sized portions. Since I am heading into to town to go shopping & run errands on Wednesday (I try to do everything at once to save gas & time-town is about a 40 mile drive) this will be a very quick and easy dinner-the ham is just heat and serve. The potatoes are from my very meager potato harvest (but they ARE Yukon Gold, which are excellent potatoes) and the Greens are some Mizuna that is still happily growing in the garden.
Thursday: Pea or Lentil Soup & Homemade Bread.
Not sure which legume I have in the cupboard. Either will work well. Any leftover ham will go into the soup. If there isn’t any leftover ham I will use a sausage or two from my freezer stash instead. This soup will also be a good way to use up any leftover potatoes and those really weak looking carrots that are languishing in the bottom of my fridge.
Friday: Homemade Pizza
Using the Pizza Hut Clone Crust recipe.
Saturday: Harvest Dinner at Church
So it will be turkey and all the fixings prepared by someone else. Well, I’ll be roasting 2 turkeys to help the church out, but you get the idea.
Sunday: Venison Fajitas, Rice & Refried Beans
Still trying to use up some more of that venison in the fridge! I’ll make it just like regular fajitas.





I hope my hubby gets a deer this year. Venison fajitas are the best!
I tried the Pizza Hut Clone crust for company and it was the BEST! Everyone loved it 🙂
