Menu Plan 10-20

I love doing this menu plan every Monday. It forces me to sit down and look at my week and review the calendar for events that interfere with supper plans. It also makes me get up off my duff and look in the fridge and the freezer and include the leftovers in the plan.

Last week’s plan went well until yesterday. We decided at the spur of the moment to head up to the land for hubs to do some deer stand maintenance and the kiddos to run around in the fields and climb trees. We wound up spending longer than intended-I hadn’t even started anything yet and it was 6pm. So we decided to stop by the little Italian place in town for dinner-when we told the kiddos Princess said “We get to eat at the Restaurant? This is the best day EVER!”

Long story short, the Venison Fajitas never got made, so those will occur later this week.

Monday: Chicken Casserole

When I roasted the 2 turkeys for church on Sat I kept the necks and boiled them to make a bit of broth. I was surprised at how much meat was on there! So that mixed with leftover noodles, bits and bobs of veggies, a white sauce and cheese should make a nice casserole.

Tuesday: Cabbage Roll Casserole, Homemade Bread, Canned Veggies.

I harvested the 8 heads of cabbage from the garden this weekend. 2 of them were seriously nibbled by the bunnies who live under our shed. (the other 6 were hung in the basement). Those two, when cleaned of all icky stuff, are about enough cabbage for the casserole. Add in the leftover rice from last week, and use some vension chopped up instead of ground meat. . . I’m on my way to a casserole.

Wednesday: Shrimp Stirfry

I’ve got a bag of shrimp that has been in the freezer for WAY to long. I can’t even remember why I bought it! So I’ll do a quick and easy stirfry-it will be a good excuse to use up the 1 head of napa style cabbage still in the garden. Add some onion and carrots and we’ll be good.

Thursday: Venison Fajitas, Canned Refried Beans and Faux “Spanish” Rice

Since I didn’t make the fajitas last week! I’ll open a can of beans and use some leftover rice reheated with salsa & tomato sauce as a wanna be “spanish” rice.

Friday: Homemade Pizza

Friday is always homemade pizza of course! I think I’d get lynched if I changed it.

Saturday:Eat at Halloween Party

Friends are hosting a kids Halloween Party! There will be pizza, and we are bringing snacky food.

Sunday: Quiche, Salad & Homemade Bread

Two weeks ago I made several Quiches for dinner & to freeze. I’ll pull one out to defrost on Sat and then be able to serve it on Sunday with a salad and some of the bread.

    Cabbage roll casserole? THAT sounds like good stuff – I love cabbage rolls but don’t love standing around, making them…

    Sounds like a great menu plan. We can’t change the pizza night tradition over here either. It is a set in stone rule šŸ˜‰
