Menu Plan 4/27

This week is another travel week!

Busy times! Tuesday afternoon I leave for the Stouffer’s “Let’s Fix Dinner” blogger roundtable in Cleveland, and I get home around suppertime on Thursday. Saturday is our annual American Legion Rider’s Poker Run benefit (organized by the incredibly awesome Yankee Bill!!!) for the Landstuhl Hospital Care Project.

But I’ll give a swag at a Menu plan-I really do feel more in control when I have one.

Monday: Corned Beef, Coleslaw & Bread

They had corned beef on sale when I went to Aldi’s last week so I picked up two (one is frozen). I have a half head of cabbage that needs to be used up, and it’s too stinking hot to make boiled cabbage, so I’m going the coleslaw route. Today is my bread baking day, so I’ll have a fresh loaf for dinner tonight. Tuesday: Creamy Ham Potatoes, Rice & Canned Veggies

Since I am leaving mid day, I will put this ham recipe (using sale ham bought post Easter) together in the crock pot and get it going in the morning for Hubs to serve up that night! (I hope it’s good-it’s a new one for me) Since I also have a rice cooker I will set the rice going right before I leave (most rice cookers will keep rice warm & perfect for 4 or 5 hours at least). Then all Yankee Bill has to do is crack open and nuke a can of green beans or carrots to go with. Healthy, filling meal (with leftovers) with almost no work for him.

Wednesday: Meal Provided by Stouffers.

No really-how cool is that? Stouffers not only giving us the all expenses paid trip to the “Let’s Fix Dinner” roundtable, but they are also providing a fully cooked meal to be delivered to our houses while we are gone for the family. I have to say that is a fantastic thing! It really takes a load of worry off and also is a “practice what you preach” sort of thing-after all, the roundtable is about the importance and positive effects of eating dinner as a family.
Thursday: Spaghetti & Meatballs

I will return right around dinnertime. Since I have frozen meatballs in the fridge, jarred sauce in the cupboard and a plentiful supply of noodles at all times, this should be a very quick throw together meal that will prevent me from running through the drive-thru on the way home from the airport.

Friday: Pizza.

Nach.

Saturday: Leftovers

Gotta use up all that stuff in the fridge somehow-plus Yankee Bill & I will have been out all day with the poker run. No point in making it difficult.

Sunday: Venison Steak, Roasted Potatoes & Broccoli

Plenty of venison in the freezer, potatoes in the bin & broccoli in the freezer. It just sounds good to me 🙂

    I love the ham in the crockpot! And I didn’t know you could leave rice cookers on like that. Great tips!!
