Menu Plan

Is there no such thing as a “typical” week? This week we’ve got a 2 week business trip for Yankee Bill, a meeting one evening for me, and of course Easter Dinner for 10 on Sunday.

Here we go!

Monday: Corned Beef, Cabbage, Carrots & Potatoes

Cooked in the crock pot. It was yummy!

Tuesday: Tuna Casserole

I should be able to use up some dibs and dabs of veggies in the fridge, as well as the little bit of leftover fish chowder (fish, tuna fish-same same right?)

Wednesday: Spaghetti & Venison Meatballs

Easy and quick. Venison Meatballs are already made in the freezer. Just combine with jarred sauce. . .

Thursday: Chicken & Stuffing Casserole

Leftover chicken from the roast chicken on Saturday.

Friday: Pizza

Homemade of course!

Saturday: Leftovers

Clean out the fridge before Easter Dinner

Sunday: Honey Ham, Au Gratin Potatoes, Green Bean Casserole, Jello Salad, Pie

Luckily for me, all I have to do is make the ham and potatoes-the rest of the family will be bringing the other various dishes.

I see some split pea soup and some sort of Ham/Potato casserole in my future next week!
