Menu Plan 9/14

Back to the full time grind of school days!  I’ve got many things on the agenda this week in the evenings to contend with.  Buddy has joined soccer, Yankee Bill has a couple of pool games for the new 9 ball league he joined, there are my standard radio show and weight loss meetings to consider.  So I definately need to have at least 3 quick and easy meals in there somewhere!

Monday:  Baked Beans & Cornbread

I had the baked beans all put together and cooking away in the crockpot on Sunday when my sweet mother-in-law called and asked us to dinner.  I’m no dummy-I said yes!  So I have an entire pot of beans all cooked up already.  Perfect since Monday nights are very hectic as it is.

Tuesday:  Fried Fish, Hushpuppies, Baked Beans & Steamed Green Bean

I have been feeling in a rut lately.  I have never tried making my own fried fish before, so I’m going to give it a go, using this recipe/directions from “My So Called Kitchen“.  Hushpuppies are a natural accompaniment, as are leftover baked beans from Monday night.  By Tuesday some more beans should be ready from the garden to be lightly steamed for the side. Mmmmm

Wednesday:  Chicken Caccitore over Noodles & Salad

The chicken recipe is for the crockpot-it will cook the day away and be ready to serve up quickly over some noodles before Yankee Bill has to run off to his game.

Thursday:  Shepard’s Pie and Bread

I’ll make it with a mix of venison sausage & ground beef, throw in all the odds and ends of veggies from the fridge, create a gravy to place it in and cover with mashed potatoes-homemade if I have the time, instant otherwise.

Friday:  Calzones

Made with the Pizza Hut crust Clone recipe.

Saturday:  Roast Chicken, Gravy, Rice & Steamed Beets

I haven’t roasted a whole chicken in a while-Whole chickens are very inexpensive and I can get 4 days worth of meals out of a single chicken.

Sunday:  Use it up Buffet

Otherwise known as leftover night.
