Cinco de Mayo is coming up, so I thought it would be fun to do a round up of the “Mexican inspired” food I’ve shared here on Frugal Upstate over the years.
I admit, as far as I know I have no Mexican heritage. Although being a typical American “Heinz 57 mix” it’s possible there is some in there that I don’t know about. I’m mostly Italian/French/German/Welsch. I mean no disrespect to anyone of true Mexican descent with these recipes–I just love making and eating foods from all ethnic backgrounds so Cinco de Mayo is a fun reminder for me to pull out these kinds of recipes. I am quite aware that they bear about as much resemblance to true Mexican cuisine as my quick stirfries do to true Chinese cuisine. So consider them “inspired by” rather than representative of!
But on to the recipes!
