Recipe: Gurkensalat (German Cucumber Salad)

I love to serve this homemade Germany style cucumber salad with my Schnitzel and German Egg Noodles (Spatzel).  It’s light and cool. ..not to mention tasty.

GurkenSalat (German Cucumber Salad)

2 cucumbers sliced thin (I use my food processor).
1/8 tsp Pepper
1/4 tsp Salt
1 1/2 TBS  Sugar
1/2 TBS Cider Vinegar
1/2 C Sour Cream
1 TBS Parsley, fresh, minced

Toss cucumber slices with salt, pepper, sugar & vinegar and marinate for 20 minutes.

Drain & mix with sour cream and parsley.

Chill for 30 minutes to let flavor develop.

    Mmm, this is one of my favorite dishes! My grandma used to make it when I was little – but we called it by the Hungarian name of uborka salata.

    My great grandmother’s parents put her on a boat to the U.S. from Austria-Hungary at age 16, and she never saw them again. She was a fantastic cook. I always wish I had been able to spend more time with her to learn her stories and her recipes, but she was nearly 90 by the time I was born

      What a great family story. . . its amazing when you think about how different life was back then-I can’t even imagine leaving everything I ever knew like that. . . wow.

      Glad that the recipe has brought back some fond memories-and lucky it’s a really easy recipe too 🙂

    Try mine, it gets better and better the longer it is refrigerated. 6-8 large cukes, peeled cut in half lengthwise, and seeds removed by scraping pulp out with spoon, then cut into small pieces. Salt them generously, and put into a large collander to sit at least two hours or overnight on counter. Be sure to put colander in another pan like a cake pan to catch the juices. After the “sweating” put them in a large dish towel and wring them as dry as you can get them. then put in bowl. In another bowl, mix: half cup sour cream, 1/4 cup poppy seed dressing, 1/4 cup lemon marinade( Lawry’s) OR 3T lemon juice, 1/4 c mayo. 2T cider vinegar, 1 tsp sugar , 1 tsp coarse pepper, 1 T dill. Mix and chill 2 hrs at least. recipe came from true Berliner.

      Sounds yummy–although I didn’t think they had poppyseed dressing in Germany 🙂
