Here’s another fun recipe challenge I got to participate in this week for the Walmart Moms. We were asked to create a recipe using one of the Farm Rich frozen appetizers. Now I purchased both the Breaded Mozzarella Sticks and the Pizza Slices–they were both tasty baked in the oven with nothing added.
But I figured I could come up with something interesting. I got to thinking about my Blue Cheese Stuffed Burgers and briefly considered making a hamburger with either Pizza Slices or Mozzarella Sticks inside–but that just seemed difficult shape wise. How would I fit them inside and really get the flavor throughout?
Well I could make sort of a meat log around a Mozzarella Stick–that would get the flavor everywhere but quite frankly would look pretty odd. I mean how would you eat it? I guess you could stick it on a hotdog roll. .. it probably would have tasted fine but honestly it didn’t sound like it would have been very photogenic for the blog.
Ahhh, but that’s when it occurred to me! I could CUT the Mozzarella Sticks! With smaller segments I could wrap the meat around and make a meatball. I pictured it as a quick bite appetizer–the kind you put on a tray and spear with a toothpick–but they came out a bit larger than I planned. These still make a great (if hearty) snack, or would be fabulous on spaghetti with red sauce.
This is more of a technique than a recipe–you simply make your favorite meatball recipe and then roll it around cut sections of Farm Rich Mozzarella Sticks. Then you either bake them (my choice for a large batch) or cook them in a skillet and you are done. Don’t worry-if you don’t have a favorite meatball recipe, I’m ready to share mine 🙂

Mozzarella Stick Stuffed Meatballs
Ingredients
- 1 lb Ground Beef
- 3/4 C Bread Crumbs
- 1 onion diced
- 1 egg
- Salt
- Pepper
- Mozzarella Sticks
Instructions

Preheat the oven to 350

In a large bowl, mix ground meat, breadcrumbs, egg, onion, salt and pepper until well combined

Cut about 5 Cheese Sticks into thirds.

Wrap meat mixture around Cheese Stick sections and form into a ball.

Place meatballs either directly on a baking sheet, or on a rack placed on a sheet.

Bake for 20-25 minutes until well browned.

You could add a little roasted green chile in that meatball too, yumm! Or bacon and blue cheese, I could go on and on…love this technique!
