Hummus is a quick, easy, tasty and healthy snack that you can whip up in no time at all. And now with Wild Oats Marketplace Organic Chickpeas (Garbonzo Beans–same thing) at Walmart, you can make it both organic AND inexpensively.
Remember how I told you a few months ago that more affordable organics were on their way? Well they are here! Wild Oats products have begun rolling out at Walmart across the country. You probably will start out with just a few products at your store, but over the next few months you should see an increased selection of Wild Oats products in your store, shelved right next to their conventional counterparts, and at comparable prices!
I learned a lot about the Wild Oats brand and the product roll out when I went to the Walmart HQ this spring. We got a chance to talk with the head of the company, ask questions, and see and taste some of the products.
My store currently has some of the snack foods, canned organic beans and spaghetti sauce, so I decided to give the products a try by making some Roasted Red Pepper Hummus!
I made this particular hummus a bit chunkier than usual (I like texture) and I went a bit heavy on the Tahini because I enjoy the nutty flavor. If you aren’t so into that you can start with a little bit less–you can always add more. That’s the thing I love about hummus, you can adjust it any way you like.
This recipe calls for a roasted red pepper–which is easy to do on a gas burner. I have a glass top electric range, so I used the burner out on my grill. You simply take the washed pepper and place it directly on the burner over the flame. You WANT the skin to burn and bubble.
When it’s completely charred you just bring it inside and peel the blackened skin off. That was easy to do under a bit of running water. Then you remove the stem and seeds, chunk it up a bit and add it into your food processor with the rest of the ingredients.
Whir it around, scrapping down the sides as necessary with a spatula to get everything combined. Taste, and adjust seasonings as necessary for your family. I like to have at least one extra can of beans on hand–if anything is too strong I can just add in more beans to “thin” out the mixture!

Roasted Red Pepper Hummus
Ingredients
- 1 can Chick Peas
- 1 Red Bell Pepper
- 1 small head Garlic
- 1/4 tsp Salt
- 1/4 C Tahini
- 4 TBS Lemon Juice
- 2 TBS Olive Oil or more to taste
- Pinch of Cumin
- Pinch of Pepper
Instructions

Roast pepper over a gas burner and then peel. Remove seeds and stem.

Place all ingredients (Chickpeas, Roasted Pepper, Garlic, Salt, Tahini, Lemon Juice, Olive Oil, Cummin and Pepper) into a food processor and pulse until completely combined. Scrape down sides of processor as necessary.

Serve with crackers, pita bread, chips, vegetables, or on a sandwich.
Variations:

Leave out the pepper and make plain hummus.

Roast the garlic for a more mellow taste.

Reduce the amount of Tahini for a less nutty flavor.

Substitute peanut butter for Tahini.
I’m so excited about the Wild Oats products at Walmart–the choice for me as a shopper has always been trying to balance the health of my family with my budget. For me that has usually meant growing organic vegetables at home and preserving them, and buying my beef, pork and chicken organically, but when it came to canned goods I had to go conventional. Now I can afford to buy more organics for my family!
