Velveeta Nacho Bake (Simple Meals)

I love a good home cooked meal.  Some days I need something warm and filling to feed the family, but something that’s quick to make.  I’m not the only mom in the world who has this issue–it’s a pretty common thing.  So next time you are in a rush to get dinner on the table, try this Velveeta Nacho Bake!

Simple Meals -- Velveeta Nacho Bake

The recipe starts with Velveeta Shells and Cheese (but any gooey mac’n cheese boxed dinner would work–just not the powdered kind) and layers in taco meat, cheese, salsa and chips.  Mmmm.

 

I made this meal on a snowday when I had not only my own kids home from school, but my best friend’s teenage son.  The recipe made 4 large servings for us–but I was feeding a couple of teenagers.  If you were normal people and added a salad or vegetables as a side you would probably feed 6.

The recipe was a resounding success.  Everyone ate voraciously and the teenager even asked me to share the recipe with his mom.  You can’t get higher praise than that from a 16 year old male!

Velveeta Nacho Bake

Ingredients

  • 1 pkg Velveeta Shells & Cheese Dinner (or any Mac 'n Cheese with the gooey cheese inside, not the powder)
  • 1 lb Ground Beef
  • 1 pkg Taco Seasoning Mix
  • 1/2 C Sour Cream
  • 3/4 C Shredded Cheddar Cheese
  • 3/4 C Salsa
  • 1/2 C Corn Chips Crushed

Instructions

  1. Preheat oven to 400.
  2. Prepare Dinner as directed on package.
  3. Cook meat with taco seasoning as directed on package.
  4. Add sour cream to the macaroni and cheese.
  5. Spoon half the macaroni and cheese/sour cream mixture into a deep dish pie plate or 8 inch square baking dish. Layer on meat mixture, half the cheddar cheese, and the remaining macaroni and cheese.
  6. Bake 15 minutes.
  7. Remove from oven, spread salsa on top of the casserole, then crushed chips, then cheese.
  8. Return to oven and bake an additional 5 minutes.

    JUST WHAT EXACTLY IS MEANT BY “2/1C SOUR CREAM”? IS IT 2 cups divided OR A TYPO OF 1/2 CUP? might make a big difference in the outcome! Thanks. It looks like it will be good.
