Sriracha Salmon Sandwich for Supper with Bumble Bee SuperFresh!

I love making meal that’s restaurant quality–don’t you?  It kind of makes me feel like a rockstar wife and mom.  But even though I work from home, I’m a busy gal and don’t want to make meals that take a long time.  That’s ok–with Bumble Bee SuperFresh premium fresh frozen fish, you can get a dinner guest quality meal on the table in just over 25 minutes!

I picked up the Salmon with Garlicky Black Pepper and Extra Virgin Olive Oil.  As a rule I enjoy salmon, and I absolutely love garlic so I was pretty sure this was going to be a home run.  I would have loved to try the Seared Ahi Tuna, but my local store didn’t carry that yet.

One of the big selling points of the SuperFresh line is that, well, it’s super fresh!  The fish is cleaned, cut and frozen right after it’s caught, giving you a great product.  Not only that, but you avoid “fish smell”.  How?

Bumble Bee SuperFresh® smells and tastes amazing. No fishy smells here. Because you prepare Bumble Bee SuperFresh® straight from the freezer, there isn’t any smell associated with thawing fish. And our frozen protein has stayed that way from harvest to your oven unlike most of the “fresh” fish you find at the seafood counter. That means it is fresh tasting, and fresh smelling.

When I opened the package, the SuperFresh salmon fillets were individually frozen and came with a parchment paper “envelope” for cooking en papillote.  Why cook in paper?  Because it seals in the moisture and the flavor with out using oil!

I followed the easy directions on the back of the package and in 20 minutes it was done.  Let me tell you–this really was a high quality, tasty fish!  It’s already portioned and seasoned–just pair it with a vegetable and starch for dinner or a salad for lunch and you’d be all set to go without doing another thing.

Slip the Bumble Bee SuperFresh® Salmon with Garlicky Black Pepper and Extra Virgin Olive Oil into its own parchment (included) and let your oven do the rest. You can even have it for lunch, it’s that easy – and delicious!

But even if you want to “step things up” a bit, you can still have a delicious meal in right around 25 minutes!  Seriously!  That’s all it took me to make my Sriracha Salmon Sandwich with cucumber salad and home made fries.  I know people tend to think of sandwiches as being lunchtime fare–but there is no reason not to enjoy a nice hot sandwich as part of your weekday dinner routine.

The prep starts anywhere from an hour to a day before.  For the French Fries, simply scrub a couple of russet potatoes well, cut them into your fries, and soak them in a bowl of cold water.  Just a few minutes of hands on work and now you can stick them in the fridge for up to 24 hours!  Likewise you can peel and cut your cucumber, add your grape tomatoes and toss with your favorite Italian dressing, and let it marinate.

When it’s time to start dinner, preheat your oven, pull out your Bumble Bee SuperFresh Salmon with Garlicky Black Pepper and Extra Virgin Olive Oil and follow the cooking directions.

When that’s in the oven you can whip up your Sriracha mayonnaise.   Just combine Sriracha with mayonnaise in a 1:2 proportion.  I used 2 TBS of the pepper sauce with 1/4 cup of mayo.  Wisk together well and refrigerate.

Drain your fries, blot them dry on a towel, and then use an electric fryer (or use a heavy bottomed pot like a dutch oven and heat oil to 375) to cook your fries in batches.  It will take 4-6 minutes per batch, depending on how thick you cut your fries, the size of your batch etc.

Making French Fries

Drain the fries on brown paper bags or a cookie rack set over a tray and salt to taste.

Putting the sandwich together is easy–use a nice roll (I toasted some onion rolls briefly under the broiler of my oven), put on your salmon, dollop on some Sriracha mayo, add a bit of lettuce and then finish up with the top bun.  Serve with your homemade fries and marinated salad.  Yum!
