Pink Velvet Whoopie Pies


  • 1 Pink Velvet cake mix (or you could use red velvet)
  • 3/4 C water
  • 1/2 C vegetable oil
  • 3 eggs
  • 1 box vanilla instant pudding mix
  • Fluffy White Frosting


  1. Preheat oven to 350.
  2. Prepare cookie sheets by lining with parchment paper or lightly greasing.
  3. Mix all ingredients except frosting until combined, then beat an additional 2 minutes.
  4. Place batter in a gallon freezer bag.
  5. Cut a hole in one corner and squeeze batter into small circles on the prepared cookie sheets. Leave 1 inch all the way around for them to spread without touching.
  6. Bake 10 to 12 minutes. Cool completely before.
  7. Spread frosting on one cake and top with a second to make a sandwich.
  8. Roll in sprinkles.
