Menu Plan 2/7

Monday: Cincinnati Chili

I made Cincinnati Chili for a crowd yesterday since we had a whole gang coming over to watch the Superbowl.  Since there is plenty left we’ll be eating that for dinner.

Tuesday: Shrimp Stirfry with Rice

We bought some shrimp for a fancy snack for the Superbowl as well-they had bags of the large, precooked ones on sale for $5.71 at Walmart.  Despite the crowd, there were so many different dips and snacks that there are still about 20 shrimp left. I don’t like shellfish to hang around long, so I’ll cook them up with some of the veggies in the fridge and a bit of teriyaki sauce for a stirfry.  This is my fish meal-of course.

Wednesday: Taco Mac ‘n Cheese, Green Salad and Fruit Compote

I have a ton of queso dip left from the Superbowl.  You know, it’s your basic velveta/salsa/sausage mix.  If I leave it in the fridge I’ll wind up noshing on it all week.  Not good.  So I’m going to make some mac ‘n cheese and use that for the cheese, then serve it with some fruit & salad to cut the calories 😉

Thursday:Chana Masala over Rice and Naan

I never did make this last week-I forgot about the Superbowl when I was making my menu plan.  Hey-I had just returned from a trip and my brain wasn’t fully functioning yet!

Friday: Pizza

From the Pizza Hut Crust Clone recipe of course.

Saturday: Bacon Wrapped Scallops, Roasted Broccoli and Molten Chocolate Lava Cake

Believe it or not, Yankee Bill and I have a meeting for our American Legion on Valentines Day.  Grrr.   It’s one we can’t miss for a variety of reasons, mostly relating to some issues we want to raise for our American Legion Rider’s group.

Anyway-we are going to do our Valentines Day early, and that’s the menu 🙂

Sunday: Leftover Buffet

Just a plan to use up whatever is left 🙂

    I am also a menu planner, planning supper 1 month at a time . This week’s menus:
    Mon-homemade wild caught red Sockeye salmon cakes on toasted buns w/ organic baby greens, homemade tarter sauce; waffle fries, corn
    Tues-lazy golombki casserole(a ground beef, cabbage, rice in tomato soup concoction that tastes just like Golombki, minus the work), carrots
    Wed-Italian sausages in homemade marinara over spaghetti, salad
    Thurs-Crockpot homemade Italian meatballs in marinara served in whole wheat sub rolls, w/ melted 6 Italian cheese blend on top(toast under the broiler), green beans, salad
    Fri-clam chowder, oyster crackers, salad

      Carol-Sounds like a fantastic week! I wish I had some of the sockeye salmon. . . I’ll just have to wait till this summer when my BIL goes fishing again 🙂

    Jenn-SOunds like you planned a great way to use up leftovers, very inventive! I have done a similar recipe with leftover queso and macaroni! Yumm!
    Carol M-your menu sounds tasty, I think I may be eating in the wrong house!
