Quick Tip: Breakfast Rice

A famous frugal quote from the Great Depression was “Use it up, Wear it Out, Make it do…or Do without”.  And that’s certainly the case with frugal cooking.  I just hate throwing out leftovers.  So here’s a unique breakfast “leftover” idea–Breakfast Rice.

Here in the US we eat oatmeal, cream of wheat (farina) and grits as breakfast foods.  And what are those except hot cooked grains?  So why not rice? It’s a very mild soft grain that goes well with a variety of flavors.  We already use it in both savory dishes and sweet dishes (rice pudding anyone)–why not as a hot breakfast cereal?

It’s easy-just take some leftover plain rice and heat it in the microwave with a dash of water.  I prefer to eat it the way I eat my cream of wheat or oatmeal-with some milk and cinnamon sugar. . . but you could really do anything with it that you’d do with any hot cereal.

    I mix it with scrambled eggs and cheese and wrap in a flour tortilla. Great on the go breakfast.

    My doctor feels that white rice is practically evil because it has such a high glycemic index. Asian countries where white rice is eaten have a much higher incidence of diabetes. I like to use up leftovers, but switching to brown rice or another healthier grain in cooking would be much better for everyone.

    In Sweden we make a porridge with round rice and milk. Eat it with milk, sugar and cinnamon. The only porridge I like.
    Cold you mix it with wipped cream, add sugar and eat it like dessert with fruit.

    Hi, I grew up eating this for breakfast- did not know you could have for dinner! LOL! It is my 14 year-old son’s favorite breakfast. When we have rice dinner, he always wants it the next morning! Angela

    I don’t have leftover rice; I have rice I’m going to use later either for breakfast with hot milk or in a stir fry (e.g. Thai pineapple fried rice). In fact, the best rice for a stir-fry is cool and slightly dry, so I always make extra.

    I grew up with breakfast rice! I think it’s a southern thing. My dad likes it with sugar and butter. I like it with butter, cream, or milk and cinnamon and molasses or honey.

    Growing up my kids love rice pudding for breakfast. Brown rice, brown sugar, milk, eggs, cinnamon, vanilla and raisins. My oldest son specifically requested it on days he had soccer games… it was part of his ritual!

    I live in western NC and this is a popular breakfast here. The kids like it with lots of sugar. I like to make it with half brown and half white rice. This compromise works at our house 🙂
