Buffalo Chicken Dip

As promised in my Snacks on Game Day post, here is the fabulous, frugal*, and fast hot dip to take to your next get together.

Just imagine this with melted cheese on top. Mmmm

Buffalo Chicken Dip

1/2 cup shredded cooked chicken (you can use 1 can of chicken)
1 Pkg of Cream Cheese
1/2 C Ranch Dressing (can sub homemade, or in a pinch could use mayo thinned w/ a little milk to dressing consistency)
1/4 to 1/2 C Hot Sauce (I usually use a scant 1/2 cup)
1/2 C Shredded Cheddar Cheese (or more. . . )

-Soften Cream Cheese to room temperature.
-Mix Cream Cheese, Hot Sauce and Ranch Dressing.
-Spread into a greased/sprayed pan
-Layer chicken on top of cream cheese mixture.
-Sprinkle with shredded cheese.
-Bake at 350 degrees for 30 minutes**.
-Serve with something pretty firm for dipping-tortillas, “frito” style scoops, crackers, celery sticks. The dip is thick and will break your typical potato chip.

*Note: Of course how frugal this is depends on the price of your ingredients. I can get cream cheese pretty darn cheap at Aldi’s. Ditto for cheddar cheese. Even at a regular store, not on sale these are not exactly hugely expensive luxury items.
**Note: Some people prefer to cook about 15 min, then put the shredded cheese on and finish the last 15 minutes. It’s up to you.

    This is a great dip, I just love it. We make it all the time, but I substitute Blue Cheese for Ranch dressing. yum!

    This sounds good and I’m always one to have leftover chicken lying around.

    I might have to restrict myself to how often I make it though, it sounds like the kind of thing I could happily get through an entire bowl of.

    If you make this using canned chicken it’s so much easier than cooking and shredding your own! I work with Swanson’s and we use their white meat chicken breast product because it’s 100% all white meat. You can also sub in blue cheese crumbles for the cheddar is you’re a big fan of blue cheese!
