Recipe: Hot Artichoke and Spinach Dip

Sometimes when you are having folks over you want something a little classier than chips and onion dip.  It is a copycat of the appetizer dip sold at TGI Friday’s.

I love making this dip when I’m having a crowd over~everything except the baking can be done ahead of time then refridgerated. . .then just pop it in the oven.  You can even microwave it!

Hot Artichoke and Spinach Dip

1/2 C Sour Cream

1/2 C Mayonnaise

1/2 C Paremesan Cheese

1/2 C Shredded Mozerrella

2-3 Cloves minced garlic

10 oz Frozen Spinach

14 oz can Artichoke Hearts

-Thaw spinach and drain thoroughly.  You may want to actually squeeze excess liquid out.

-Chop artichoke hearts.

-Mix all ingredients and place in a shallow greased casserole dish.  At this point you may refrigerate until ready to cook.

-Bake for 20 min at 325 or microwave for approx 5 min on high.

-Serve with tortilla’s, pita chips (homemade?) or toasted bread wedges.

    I love this recipe and have made it many times! Substitutes for sour cream that have worked well: Cream Cheese, Cottage Cheese (pureed in a blender)…YUM!!
