Menu Plan 8/3

Monday:  Biscuits & Sausage Gravy with Fruit Salad

Sort of a “Breakfast for Dinner” type thing.  I’m almost out of bread, so biscuits are quick and easy to whip up.  I have about a cup and a half of milk left that is just past the  “sell by” date.  If I cook with it, Yankee Bill will feel so much better about consuming it.  He believes that you should throw milk out after the “sell by” date.  I’ll use our venison breakfast sausage in the gravy.  The kids find it a tad bit spicy, but in the milk gravy that taste should be softened somewhat.

I’ll used canned & frozen fruit to make a salad to go with. Somehow a garden salad just doesn’t seem right with biscuits & gravy!

Tuesday:  Stuffed “Grape” Leaves, Garden Salad & Beets

Well, it actually won’t be grape leaves, it will be lettuce leaves, just like in my article on “How to Use Up Too Much Lettuce”.  The garden is still in full lettuce, carrot & cucumber mode so another garden salad is good.  Also our beets are ready, so I’ll be boiling & slicing some of those.

Wednesday:  Lettuce Wrapped Fish, Herbed Rice and Steamed Vegetables

Again, experimenting with ways to cook with lettuce.  I’ll be trying this recipe from the NY Times:  Lettuce Wrapped Fish.  This also achieves my goal of trying to get fish into our diet at least once a week.   I’ll use some garden fresh herbs and cook them in with the rice in my rice cooker-finishing with a little bit of butter, then steam both beets & carrots from the garden.

Thursday:  Taco Salad, Rice & Re-fried Beans

Salad. Lettuce. Are you seeing a theme here? Anyway, the kiddos love all food even vaguely Mexican, so this is likely to be a hit. Especially if I do it “make your own” style at the table.  The rice is leftover from the night before, maybe mixed with a little salsa if I’m feeling crazy, and the refried beans are straight from the can 🙂

Friday: Homemade Pizza and Sauteed chard

The pizza is made with the Pizza Hut Clone recipe, naturally.  As a side I really need to use up some of the Chard from the garden that has finally reached full maturity.

Saturday:  Pasta A La Pomodoro & Salad

Pasta A La Pomodoro is a fresh and light Italian dish.  The version that I am making has tomatoes & basil with cannelloni beans & pasta. If I find some nice fresh tomatoes before Saturday I’ll use those, otherwise canned will work.  This is my meatless dish for the week.

Sunday:  German Birthday Dinner

It’s Yankee Bill’s birthday so I’m making him his favorite meal.  Pork Schnitzle, Homemade Spatzel, Gurkensalat (aka Cucumber Salad) and Cherry Pie.
