Menu planning makes my life easier-especially when I’m heading out of town for a conference!
Here is where you put the considerations for the week
1. I’m out of town Wednesday–Sunday for Type A Parent Conference (I’m on one of the panels). That means I need to have a couple of frozen meals on hand for Yankee Bill. (I long ago bowed to reality-Yankee Bill will not cook while I am gone. My flight isn’t till mid day-so I could start something in the crockpot for we’d night’s dinner.
2. As usual, the kids have swim club two nights this week from 5-6:30 which always throws a wrench in my dinner plans.
3. I bought a package of chicken thigh quarters on sale for $.39 a lb that needs to be used this week. I also have the ground beef left over from our fathers day feast.
4. The Tat Soi is starting to bolt in the garden and I have a couple of heads of romain that I should be using soon as well.
Taking all that into account here is my game plan:
Monday: Salsa Chicken on Tortillas with Green Salad
Last week I never did get around to making the chicken salsa-so I’m using the chicken thighs i got on sale in the crockpot today. The salad will be made with the Romain & Tat Soi mixed with store bought produce.
Tuesday: Asian Beef Lettuce Wraps with Homemade Egg Fried Rice
The ground beef I need to use will be browned and have soy, garlic, ginger and onion. We’ll wrap the beef in the lettuce and serve with fried rice.
Wednesday: Crockpot Lasagna with Green Salac
Store bought!
Thursday: Frozen Salsbury Steaks with Frozen Vegetables
Store bought!
Friday: Frozen Pizza
Store bought!
Saturday: & Sunday: Yankee Bill’s Choice
