Menu Plan

I’m a tad bit late (insert sarcasm here) posting this weeks menu plan. . . but honestly, I did make it on Monday and have been following it pretty well.  I just didn’t get online to post it!

Monday: Potato/Ham patties, Roasted Potato Skins, Homemade Bread & Garden Salad.

I am still trying to work my way through the second ham I bought at Aldi’s several weeks back for $1.79 a lb.  I ground up about 2 cups of ham, then baked 6 small potatoes, scooping the centers out, which I mashed & combined with the ham (note to self-next time add a bit of flour & egg so they stay together better!).  The skins were roasted on a cookie sheet with a little bit of olive oil, salt & pepper, and a tiny bit of shredded cheddar.  Mmmm.

Tuesday: Asian Crockpot Wings, Rice & Sauteed Snow Peas

Finally-I am using up the last of the chicken wings in the freezer (can I hear a hallejulia?).  Although Princess, Yankee Bill and I really liked the Cola Wings, Buddy has decided that he really isn’t fond of them. . . so I decided to try a different preparation.  The wings were good, but not great. . . I probably need to use one of the recipes that have more ingredients-like Hosin & Plum sauce to get that true Asian flavor.    The rice is leftover from last week, and the snow peas are from the garden.  I did toss some spring onion from the garden in the sautee as well.

Wednesday: Soup and Sandwiches

Sometimes you just need a quick and easy meal-and there is nothing wrong with having sandwiches for dinner. Especially when the weather is hot.

Thursday:  Tuscan Linguine, with Garden Salad

This Tuscan Linguine is not your typical pasta meal-it has tuna in oil as it’s protein source and not a tomato in sight.  I discovered it last year when I started trying to work a little more fish into my diet without going broke.  I am always striving to eat a seafood and a vegetarian meal each week in a bid for better family health. . .

Friday: Homemade Calzones

The kids will get to help build their own calzones this week-so it’s not only meal prep-it’s family fun as well!  Of course I’ll be using the Pizza Hut Crust Clone recipe.

Saturday: Potato Pancakes with Applesauce & Sour Cream, Cucumber & Tomato Salad

This meal is by Buddy’s request.  I asked him “what meal haven’t we had in a while that you like” and he immediately requested this family favorite that we normally eat in the winter on “Christmas Tree Decorating Night”. I had a hard time paring it with something-but I figure after the fried food a bit of crisp vegetable with a grease cutting vinegar dressing might be just the ticket.

Sunday: Going to a BBQ

Heck, it’s the 4th of July!

    The Tuscan Linguine reminded me of one of my current favorites:

    Saute onion, bell pepper (any color), and garlic in a little oil. Meanwhile, boil pasta with a diced potato (the potato should be cubed small enough to take the same amount of cooking time as the pasta–about 1cm or so). When both are done, drain the pasta/potato and combine with the vegetables. Stir in one can of oil-packed tuna and a couple tablespoons of prepared mustard. Season with pepper flakes to taste.

    I find that 1 onion and bell pepper makes enough for dinner for two with no side dishes, so that should help for scaling up. I like this dish as an alternative to tuna casserole, and I call it “idiot tuna.”

      Rachel-ohhh, that sounds very good (and easy) as well! I’ll have to try it sometime soon.
