Meal Plan 8/11

Welcome to another crazy busy summer week.  I don’t know why every year I think summer is going to be a “slower” time and then am surprised when it’s crazy busy.  I just don’t learn I guess!

I’ve got several things to consider this week:

1. It’s still just Yankee Bill, Buddy and I.  Princess comes back on Saturday!  Yay!  We’ve missed her.

2.  Yankee Bill has meetings on Tuesday and Wednesday night, so it’s just Buddy and I.  Thursday we are taking an all day field trip, so dinner needs to be ready.  Saturday we are going to the beach, so something simple is called for that day as well.

3.  I’ve got some cooked leftover chicken, some cooked ground beef/venison mix, and a ton of garden veggies like cucumbers, zucchini, cabbage etc in the fridge.  I have a few beans and a bit of lentil I want to use up.

4.  Zucchini is coming in bigtime.  The few other things I’ve got in the garden are sort of “meh” except the beans.  The purple pole beans are coming in well.  I’ve got a few tomatoes starting to ripen up as well.

5. As always my goal is to have one venison meal, one beef meal, one fish meal, one pork meal, one bean meal, one meatless meal and one soup meal per week.

Taking all that into account here is my game plan:

Monday: Chicken Spinach Alfredo with Fire and Ice Salad

The recipe for the Chicken Spinach Alfredo will be coming soon!  It is a quick meal because I use jarred sauce.  The Fire and Ice Salad was made with cucumbers and tomatoes from the garden.

Tuesday: English Muffin Pizza and Green Salad

Yankee Bill isn’t home tonight but I have Buddy’s friend over.  I needed something quick and easy to make so I whipped up some English Muffin Pizzas–just made with the muffins, spaghetti sauce, mozzarella and pepperoni.  I ran them under the broiler and voila! Done.

Wednesday: Chicken Caesar Salad

I have a bunch of leftover chicken from Monday night, and I have plenty of salad fixings.  With the remainder of the creamy Caesar dressing in the fridge it’s a quick weeknight dinner.

Thursday: Homemade soup

This will be a lot of leftovers (including the beans and lentils) tossed into the crockpot with broth in the morning and eaten as soup when we get home from our little trip to Howes Cavern.  I’ll use some of the leftover English Muffins alongside.

This is my soup and my bean meal for the week.

Friday: Beef & Vegetable Stirfry over Rice

I’ll use the cooked ground beef/venison mix along with veggies from the fridge (heavy on the zucchini mind you) and whip up a stirfry.  It will be served over rice.

This is my beef and my venison meal for the week.

Saturday: Burgers on the Grill, Potato Salad and Sliced Tomatoes

Just your typical Saturday night family cookout.  Burgers & Buns, homemade potato salad and some sliced tomatoes so I feel like I’ve served a vegetable.

Sunday: Salmon Loaf, Roasted Green Beans and Mashed Potatoes

Old Fashioned Salmon Loaf is just a Sunday Dinner kind of thing.  I like to serve it with some mock Hollandaise sauce -with some Old Bay seasoning mixed in!  The green beans are fresh from the garden, tossed with oil and season salt and then roasted in a hot oven till they start to brown.  YUM.  Mashed potatoes most likely from the box unless I have a  bunch of time.

This is my fish meal for the week.

    Your menues sound great. You inspired me to start planning my meals ahead. Makes life soooo much easier. I remember going to Howes Cavern, nice and cool there! I learned about Fire & Ice salad after coming here to Florida. Very refreshing on our hot summer days!
    Fixing pulled pork this weekend for big family dinner. I use my paddle in my Kitchen Aid mixer to shred the pork.
