We are at that odd time of year when I really have to take the weather into account when I plan my menu. Is it supposed to be 87 (like it was last week) or 60, like it is today? No one wants a thick hot casserole when it’s warmer than anything outside!

Monday: Ham Potato Soup & Salad
Weather: rainy, high of 60
A bit warm, but the rainy weather makes you think of comfort food. I still have that Potato Ham crockpot bake from last week in the fridge. If it doesn’t get eaten tonight I’ll have to toss it. . . So I’m going to use the gorgeous new food processor that Yankee Bill gave me for my birthday, whir the heck out of it, add some broth and make soup.
Tuesday: Cabbage Roll Casserole, Sauteed Zucchini
Weather: Rainy, high of 56
Since it will be the coolest day all week, something very warm and comforting is in order. I’m making the casserole with leftover rice, cabbage that is starting to look a bit wilted, and some venison sausage. The zucchini is a purchase from the local veggie stand (although obviously shipped in)
Wednesday: Chicken Stirfry & Rice
Weather: Cloudy, high of 67
In a fit of healthful planning I marinated 6 chicken breasts last week in fat free italian dressing and then baked them. The intent was to have quick easy and heatlhy protien ready for lunches. that worked but I proably should have frozen a couple! To use them up, I’ll cut some up and add to stirfried veggies.
Thursday: Spaghetti Carbonara & Salad
Weather: Thunderstorms, high of 67
Sort of an in between meal. It’s got the warmth of a comfort food meal, but even with the bacon in the sauce seems lighter than a traditional spaghetti dinner to me.
Friday: Pizza
Weather: Showers, high of 67
Because we always have pizza (or a variant like stromboli) on Friday. The kids have been enjoying “decorating your own mini pizza” lately.
Saturday: Leftovers
Weather: Light showers, high of 66
We are holding a very belated friends B-day party for Princess on Saturday. I’ll be whipped after it so we’ll eat whatever I can scrounge in the fridge. Life is like that sometimes!
Sunday: Baked Chicken, Potatos and Carrots
Weather: Partly Cloudy, high of 63

I can’t BELIEVE it’s princess’s birthday again already. It seems like just a month ago that you were asking for ideas for a Hannah Montana party. Could that have been a year ago?!?
You’re cooking on Sunday? It’s Momma’s day! Maybe Yankee Bill will volunteer to make the chicken that day lol!
Peggy-I KNOW. . they grow so fast. This year we are doing a “Craft” party at her request. Should be interesting. . . It’s this weekend, so bday wrapup post next week.
Amiyrah-Hmm, that isn’t the tradition in my house. Maybe I’ll have to designate a no cooking day 🙂
We have started making potato-leek soup almost every week, just because it is so delicious (and it’s cheap, too!). Leeks are cheap in these parts, so it leads to some great meals with fresh bread and veggies, and soup. Any time you can make stuff with fresh ingredients without cashing out the retirement annuity, you’re ahead of the game. I love that you can do some organic gardening on the cheap, as well!
