Menu Plan 9-15

This week is a short one for me! On Thursday afternoon I fly out to Vegas for the Blog World Expo and New Media Conference.* I know from experience that for the 4 days I’m gone Yankee Bill will either take them to Nana’s or take them out to dinner.**

So that leaves me with only 3 meals to plan.

Monday: Fried Rice

This was on the menu for last week but didn’t happen. Yankee Bill and I wound up going out to dinner one night, so the kiddos had leftover homemade pizza on the night we were supposed to make fried rice. I still have quite a few leftovers in the fridge that need to be used up-fried rice is a perfect vehicle for that.

Tuesday: Open Faced Roast Beef (Venison) Sandwiches, Roasted Broccoli, Sliced Tomatoes, Mashed Potatoes

There is left over meat from the venison roast. I’ll make some brown gravy and layer it over some thick sliced homemade bread/toast. There are still a few broccoli florets in the garden, I’ll use them up, add a dish of sliced garden tomatoes and make mashed potatoes from a box (YB prefers them)

Wednesday: Beef (Venison) Stew

There go the last of the leftover roast, along with any extra veggies, taters etc. I may get fancy and decide to whip up some biscuits instead of just using bread from Monday’s batch. (I bake 2 loaves every Mon).

And that’s it! As I said, YB will take care of the kiddos for the rest of the week, and I’ll have the unprecedented chance to eat in some lovely restaurants that I normally wouldn’t. (They are taking us to dinner at the TAO one night. I would never, in a million years, wind up going there on my own dime).

I am bringing two boxes of breakfast bars to use for, well, breakfast, as well as for the plane trip and to bring along to the conference if I need a snack. I’m not sure if this is one of those “coffee break included” conferences, or a “buy your own darn coffee” ones. Either way, I’ll be prepared. I’m also bringing my Nalgene bottle and some of those lemonaide sticks. I’m set!

*Yes, Walmart chose me and one other blogger from the “Eleven Moms” to attend the Blog World Expo and New Media Conference. They are flying us out, paying for our rooms and meals, and paying for the conference fee. I am ecstatic-I never would have been able to justify to my frugal soul spending the money to attend the conference. There are some really interesting panels and sessions that I am just dying to go to, as well as the chance to meet some folks I’ve been reading in person.

**I know, taking them out to dinner isn’t very frugal. In the past I used to buy convenience food-frozen pizzas, lasagna in a box, that sort of thing. I figured they were more expensive than scratch, but less expensive than eating out. Yankee Bill didn’t use them. So I figure why fight the truth-if they aren’t going to get use then it’s a waste of money to purchase them. And hey-we can afford a couple of dinners out at this point.
