Menu Plan – uh – Tuesday

I”m a day late and a dollar short. . . . Oh well. Here we go a day late:

Monday: Gnocchi & Sauce, Salad

This was almost a disaster. The first batch I made totally dissolved in the water! Oh no! So I did a quick change and sauteed them in a bit of butter and olive oil. Next time I’m going to try Cheap Healthy Good’s method for making Gnocchi. I think the issue was the types of potatoes I used.

Tuesday: Crock Pot Cream Cheese Chicken, rice or spaghetti, salad/veggies.

I haven’t made this exact recipe before, but have done the plain “cream of” soup with chicken. This sounded like wonderful comfort food for the snow day (actually frozen rain storm day) we are having. The chicken is sale chicken from the freezer, the cream of soup is store brand from Aldi’s. The two starches are leftovers out of the fridge, as is the salad (from last night). We also have frozen veggies to round it out.

Wednesday: Pizza and Roasted Broccoli

Homemade of course.

Thursday: Fish Taco’s, Black Beans and Rice

I’ve been dying to try making fish tacos ever since I heard about them. At first I thought they would be like regular tacos-just with fish instead of ground beef. That seemed like a rather icky combination. But then I found out that they are either battered or grilled fish with shredded cabbage and a ranch type sauce. Last time I was at Aldi’s I picked up a box of their frozen battered fish filet’s, and we always have tortillas on hand.

Friday: Venison Curry with Rice

Venison from the freezer, leftover everything for the curry.

Saturday: Roasted Chicken, boiled potatoes, frozen veggies.

Chicken is $.59 a lb for a whole chicken. A roast chicken is delicious, easy and classy 🙂

Sunday: Chicken and Gravy with Biscuits.

It goes without saying that I’ll use the leftover chicken to make this. I’ll whip up some homemade biscuits as well.

    My thanks to whomever posted the tip to reheat pizza in a fry pan rather than the microwave. All the difference in the world.

    Oh, MAN. Fish tacos are the best, I enjoy them at the local Costa Vida restaurant whenever I can. I thought that they sounded gross, too, until I tried them. That experience would lead me to make them at home, actually, as well. (When you make them yourself you don’t end up cashing in the retirement annuity to dine out at restaurants all the time!)
