This Weeks Menu Plan

Monday was too busy to even think of posting. In the morning we had our town’s parade and Memorial Day ceremony at the cemetery. Yankee Bill wore his uniform and drove one of the older vets (WWII!!) in his antique convertible, then stood in the formation for the ceremony. I didn’t march this year due to a sprained ankle that is still healing.

Then we BBQ’d-again-with friends. By the time we got home from that kiddos seriously needed to be scrubbed down, put to bed etc. Then the dishes that had been ignored all day were screaming for attention. By the time I finished that I was “plumb tuckered out”.

So here we are again on a Tuesday with my Monday menu plan 🙂 If you want to read the menus of lots of folks more organized than me, head on over to The Organizing Junkie.

Special considerations for this week. Dance recital rehearsals Tuesday through Thursday this week, right in the time frame where I usually cook dinner-so dinners need to be either prepared ahead of time so I can just warm them up, or made up in the crockpot. This Friday Yankee Bill and I are going out of town (Nana is watching the kiddos overnight) so there is no specific meal planned for that day-Nana will feed them. I also need to continue to work in a fish and a meatless dish each week.

Monday: BBQ with Friends

I provided some polish sausages (purchased at Aldi’s-the John Morelli ones. They are fairly inexpensive, and folks always like them), Deviled Eggs, Tortilla Chips and homemade canned Salsa.

Tuesday: Potato Sausage Casserole, Green Beans, Bread

I’m using leftover cooked sausage from the BBQ in the casserole. I peeled and cooked the potatoes tonight. I’ll put the food in the crockpot late this afternoon so that it will cook while we are at rehearsal. The beans are from the can, and the bread is in the breadmaker as I type. (I make 2 loaves each week)

Wednesday: Turkey, Rice, Salad and Vegetables

I purchased a frozen turkey at a great price per pound last week, intending to cook it this weekend. Due to the multiple BBQs, it never was cooked. I will put it in the oven so it can cook while we are at rehearsal and be done when we arrive home. The rice can go in the rice (bought in a 20lb bag at the Asian grocery) can be cooked in the rice cooker-which will hold it at temp for several hours. Salad will also be made ahead of time (including extra for Thurs), and the veggies will come from the freezer.

Thursday: Quiche, Bread and Salad

The quiche can be made ahead of time (with a rice crust), the bread and Salad made ahead of time.

Friday: Out of town, Nana feeding kids

Saturday: Trout, Rice, Grilled Veggies

This works in my fish-and they are 2 nice large frozen trout that my BIL provided us. I’ve got some yellow squash I need to use up, and grilled yellow squash it one of my favorites.

Sunday: Pizza

Since we will be out of town and miss homemade pizza night, I’ll make it on Sunday.

    Wow, All I can say is you eat very well. My menu was crap all day long if we even had that ha ha ha lol sad but true.

    never bought the polish sausages from aldi..always been skeptical but i will have to give em a whirl now!

    Anon-One of my goals is to eat well on a budget 🙂 Since I’m a SAHM, I consider that to be one of my primary jobs-even though some days I really don’t feel like it! The menu planning really helps me to think ahead and use stuff up-I encourage you to try it, it is probably easier than you think.

    Niki-I highly recommend them-I get the John Morelli polish sausages, and it’s $3.49 for a big package.
