Menu Plan-June 9th

Busy week! So busy that the menu plan didn’t happen yesterday.

For some reason my entire menu plan got all shifted around last week. So I thought I’d do a little review of what actually happened.

On Monday we did have the trout, and I flaked off the extra and put it in the fridge. Then somehow on Tuesday I made the turkey soup (mostly because I forgot to look at my own dang plan). Wednesday I made the Asian chicken salad, then by Thursday I realized I had forgotten the Alfredo and I needed to use up the fish before it got nasty, so I made that.

Friday YB was out of town, and we had a free kids movie to go to, so I wound up pulling out some frozen chicken nuggets that Nana had bought on impulse because Buddy said he wanted them. Then Saturday it was warm and sticky, we had spent all afternoon outside, and YB was still gone. So I figured heck with the cooking thing and we had sandwiches.

Sunday I took the leftover soup, thickened it up, added gravy and veggies and made a sort of pot pie out of it (mashed taters on top).

But that is how this whole menu planning thing goes. Sometimes you follow it faithfully, and sometimes you have to adjust based on life. At least it gives me a starting point and helps me to avoid wasting food.

Now on to this week.

Monday: Homemade Pizza.

Last week was probably the first time in 5 months or so that we didn’t eat Pizza at least once. The kiddos noticed and requested it for Monday. How could I refuse 🙂

Tuesday: Hotdogs, Homemade rolls, Southern style greens, freezer coleslaw, potato chips

Hotdogs on the grill were another request. Since it is a simple meal and doesn’t heat up the kitchen we are going for it.

Wednesday: Cold Salad Plate

I’ve never done this before, but was inspired when rummaging around in Meredith’s archives the other day. She did a lovely Southern Tearoom style old salad plate for her mom last year. It just looks so pretty and cool. My version will include egg salad (in honor of Eggs in the Frugal Food Series) Turkey Salad (leftover from that roast turkey 2 weeks ago. Don’t worry I froze the meat) and Tuna salad on a bed of lettuce with some tomatoes and other veggies. I’ll have either rolls or bread as a side-maybe even biscuits if time gets away from me (biscuits are way faster to make than rolls).

Thursday: Quiche & Salad

Again in honor of Egg week, and in line with my goal for having one meatless meal a week. I should be able to use up some of the leftover veggies and make a nice meal. I’ll use my regular quiche recipe.

Friday: Homemade Pizza

I can’t get away with skipping this 2 weeks in a row. There would be a mutiny.

Saturday: Attending a BBQ, will bring Asian Chicken Salad

Sunday: Fish packets an cabbage packets on the grill, rice on the side.

I actually don’t have a recipe for the fish yet, I’ll do some searching and find something. The cabbage is shredded cabbage, beer, butter, salt, pepper, onion & bell pepper. Yummy.

    I went to lunch with a friend today and had the cold salad plate…yum!

    I just couldn’t decide on what to have so a helping of egg salad, tuna salad, and chicken salad on a bed of greens sure did the trick.

    Shannon-Meredith is a wealth of information, and a great lady 🙂

    Niki-We had that dinner last night, and it was really nice. Now don’t get me wrong, it isn’t as filling as a steak or something, but it really was a nice meal for a hot sticky night 🙂
