Recipe: Green Chile Chicken Lasagna

The weather is starting to cool down, school is starting soon & fall is almost upon us. With fall comes some of my favorite comfort style foods-soups and casseroles.

I like this Green Chili Chicken Lasagna because it is different from your run of the mill casserole. It’s quasi Mexican but uses chicken instead of ground beef. Corn tortillas are used instead of lasagna noodles (although you could substitute those instead) and the “cream of” soup plus the Rotel gives a different taste from the standard enchilada style sauce.

Green Chili Chicken Lasagna

2 10oz cans Tomatoes & Green chilis (aka Rotel)
1 10 3/4 oz can Cream of Chicken soup
1 pkg onion soup mix
2 C Chopped Cooked Chicken
1 sm can green chilis
6 Green Onions, sliced
Chili Powder
8 Corn or Flour tortillas
1/2C Fresh Cilantro, chopped
8 oz cheese

Warm Tomato & Green Chilis, Cream of soup, onion soup mix, chicken, chilis, onions and chili powder to taste in a saucepan.
Cut tortillas into 1/4’s.
Grease 8X13 pan.
Layer 1/3 tortillas, 1/3 sauce, 1/3 cilanto and 1/3 cheese. Repeat ending with the cheese.
Bake at 350 fo 35 min. Let stand for 10 minutes before slicing.

Variations:

Use Pork, Beef or even beans instead of Chicken

Use Lasagna noodles or a layer of spaghetti instead of the corn tortillas

Use homemade “Cream Of” soup or white sauce

Substitute onions for green onions

Substitute dried cilantro for fresh

    That’s a good-looking recipe. You know, if you live “out west”, you no longer assume tacos always use ground meat. Pork, shredded beef, chicken, and fish are all popular. I bet this would taste awesome with some leftover flaked white fish…

    Okay, in total respect of my effort to do everything in frugality, I used my homemade salsa and mixed it in with my homemade ‘cream of’ soup mix, green onions and a bit of chili powder. This is definately one of our ‘new’ favorite ways to use up leftover roasted chicken. Thanks!
