It’s time to talk about Walmart’s Meal Solutions again! I think it’s a great idea that twice a month Walmart highlights the ingredients for a quick and easy weeknight meal.
This weeks meal is Chili Chicken Mac ‘n Cheese.
Kraft Mac & Cheese 7.25oz (regular or whole grain)
GV chunk breast of chicken 12.5oz
5th Seas Chili Powder 2.87oz
GV Chunky Medium Salsa 24oz
Betty Crocker chocolate chip cookie 17.5oz $1.72
So what is Chili Chicken Mac ‘n Cheese? It’s a fun way to dress up your basic box of Mac ‘n Cheese! Most of us have a box or two of Mac ‘n Cheese hanging out in the cupboard for those emergency dinners or lunches. When you have no idea what to make for dinner (or your day got away from you and you realize it’s almost dinner time and you haven’t started cooking) Mac ‘n Cheese can be turned into a filling, if not gourmet, meal.
It’s super simple to make. Just cook it up your Mac according to the directions on the box, then add a drained can of chicken meat, a can of salsa and a tsp or two of chili powder and viola!
If you really wanted to be fancy you could toss on some shredded cheddar.
Another classic add in for Mac ‘n Cheese that your mom probably used to try to sneak by you is canned peas. See-it’s sort of healthy! Full disclosure here-I kind of like peas in mine.
And of course you can’t talk about Mac ‘n Cheese add in’s without bringing up the granddaddy of them all-hotdogs! Just chop up a couple of cooked franks (I like to use the microwave to cook mine if it isn’t BBQ season)

My favorite SUPER SECRET add-in is cooked & pureed squash. It’s about the only way to sneak in this much-hated vegetable and my boys never know. It adds richness but NO SQUASH FLAVOR!
I don’t often make kraft dinner, but when I do, I like to stir in some ground beef (precooked from the freezer) for extra protein and substance. With the meat precooked, it takes no extra time at all (just thaw in microwave while pasta cooks), and almost turns it into a real meal.
I used leftover taco meat once, and it made for a really tasty dish too.
I have thrown in a can of tuna and a sprinkling of parsley for a faux tuna helper. I have also fried up some ground turkey, and seasoned it with a taco or chili mix, and thrown that in with the mac and cheese.
Maggi-those are great additions! Mac and Cheese is so easy to “fix” up 😉
