Heat oil on medium high.

Slice into 1 1/2 inch sections

Cook pieces for about one minute, turning to brown evenly.

Place cut-side-up on a piece of wax paper. Top with another piece.

Press down and flatten plantain with the bottom of a pot or other flat surface

Cook flattened plantain in hot oil for two minutes or until they turn golden.

Sprinkle with salt & serve.
