Nothing signals the beginning of Fall in my kitchen like these delicious Pumpkin Chocolate Chip Cookies!

Canned Pumpkin is never terribly expensive here in the northeast, but as a bonus it tends to go on sale (and have coupons pop up) around Halloween and Thanksgiving. Pick up a can and give this oh so yummy recipe a try.

Pumpkin Chocolate Chip Cookies

2 1/2 C Flour
1 tsp Baking Soda
1 tsp Baking Powder
1 tsp Cinnamon
1/2 tsp Salt
1/2 tsp Nutmeg
1/2 C Softened Butter
1 1/2 C Sugar
1 C Canned Pumpkin
1 tsp Vanilla
1 Egg
1 C Chocolate Chips

Cream butter and sugar together.

Add pumpkin, vanilla and egg. Beat until the mixture is light and creamy.

Mix all dry ingredients together well in a bowl.

Add dry ingredients to wet and mix well.

Fold or gently mix in chocolate chips.

Drop by the rounded teaspoonful onto a greased cookie sheet and bake at 350 for 15-20 minutes (until lightly browned).

Delicious. I don’t like pumpkin pie very much, but I love other pumkiny things and this was great. Micah is wild about them. He’s a complete pumpkin fanatic. During his first cookie, he kept muttering “pumpkin…” “chocolate…” “pumpkin…” 🙂
