Blueberry Lemon Crumb Bars (and New Products at Walmart)

It’s time for me to try out some more new products at Walmart!  It’s such fun to receive a box full of new ingredients and products to play with for the last few months.

So what was in this month’s box?  Pasta Gourmet Italia (Trains Planes and Automobiles) ~ Hidden Valley Ranch Greek Yogurt Dips ~ Hidden Valley Ranch Greek Yogurt Dressing ~ Smucker’s Fruit and Honey Blueberry Lemon Fruit Spread ~ Skippy P.B. Bites ~ Mae Ploy Sweet Chili Sauce ~ Wishbone EVOO Sundried Tomato ~ Sriracha Mayo

I was really excited about the Sriracha Mayo.  If you are a sushi lover like me, you’ve probably had some kind of sushi roll that had “Dynamite sauce” on it.  That’s basically (or exactly!) what this is–Sriracha mixed with mayo.  Delish.  I will be eating it on any kind of meat sandwich I make–including perking up a boring tuna fish!  And I might just be inspired to make some sushi at home.  My good friend and podcast co-host Lynnae used some in her Deconstructed Fish Tacos.

The Pasta Gourmet Italia is the same tasty pasta I tried last month, just in a different size.  It’s still 100% all Natural, GMO free, no added salt or sugar, and the colors are made with tomatoes and spinach not dyes.

The two Hidden Valley Ranch products feature Greek yogurt–the dip to be mixed in with some, and the ranch dressing made with it.  I’m a fan of tangy Greek yogurt so these are both winners in my house.  You can use them with salads and chips, but also consider using it to coat homemade chicken fingers or anything you are breading for an extra layer of flavor.

I’ve not tried the Mae Ploy Sweet Chili sauce yet, but I’m a big fan of a variety of Asian cuisines including Korean, Chinese, Japanese and Thai, so I’m sure I’ll like it!  My friend Linsey used some to make Baked Sweet Chili Chicken Wings.  I might just have to try some for my next party.

It’s very interesting that Wishbone has come out with EVOO (extra virgin olive oil) dressing.  I especially enjoy sun dried tomatoes so this dressing will be used up quickly on my lunchtime salads.  My friend Tina used the dressing mixed with some of the Hidden Valley Ranch Greek Yogurt Ranch Dip packet to make a tasty pasta salad.

The Skippy PB Bites were pretty good–a pretzel ball covered with a peanut butter coating.  I thought they would be even better with chocolate, and apparently Denise thought so too–she turned them into mini buckeyes!

I decided to take the Smucker’s Fruit and Honey Blueberry Lemon Fruit Spread and make a recipe using that.  Blueberry Lemon Crumb Bars!

Delicious Blueberry Lemon Crumb Bars

This recipe is simple to make.  First you combine flour, brown sugar, oats, and baking soda.  Then you cut or mash in a stick of softened butter.  I do the mashing thing–just using my clean hands to keep squeezing the butter into the rest of the stuff until it all is incorporated.  This gives you a nice, crumbly mix.  You remove a bit of the mixture and then press the rest into a 9X9 pan to make the bottom crust.

Making Blueberry Lemon Crumb Bars

Pour your Blueberry Lemon Fruit & Honey over the pressed in crust and then sprinkle the remaining loose mixture over it to make your crumb topping.  Bake, cut and enjoy!

This recipe is so easy and tasty–and you can change it up just by changing the fruit spread you use.  I hope you all like it as much as my family does!

Blueberry Lemon Crumb Bars

Ingredients

  • 1 C Flour
  • 1 C Quick Cooking Oats
  • 2/3 C Brown Sugar packed
  • 1/4 tsp Baking Soda
  • 1/2 C Butter
  • 9 oz Blueberry Lemon Jam (or plain Blueberry)

Instructions

  1. Preheat oven to 350.
  2. Combine flour, oats, brown sugar and baking soda.
  3. Cut or mash in the softened butter until the mixture is crumbly.
  4. Remove and set aside 1/2 C of the mixture.
  5. Press the remainder into a 9X9 pan.
  6. Spoon jam evenly over the pressed crumb mixture, then sprinkle with the reserved 1/2 cup.

  7. Bake for 30-35 minutes, until top is lightly golden.
  8. Cool and cut into 16 bars.
