Meal Plan 8/21

Summer is winding to a close, but I still have a few weeks left to enjoy with the kiddos.
Menu planning continues to keep me on track.  Here are my considerations this week:

1. On Monday we had a kids birthday party barbeque to attend for supper.  On Tuesday Yankee Bill has a dinner meeting, Wednesday night is Pool night for him, and Friday we are co-hosting a joint 50th birthday party BBQ for Yankee Bill and 2 of his best friends.

2.  With our houseguests last week we wound out eating out more than I had initially planned–so I still have the shrimp in the freezer.  I also had a can of chicken that didn’t seal well that has been in the freezer since last week that needs to be used up.

3.  The garden has zucchini, beets, carrots, cabbage, radish greens, rattail radish pods, green tomatoes and green beans.  I can’t wait till the tomatoes turn red!

4. As always my goal is to have one venison meal, one fish meal, one bean meal, one meatless meal and one soup meal per week.

Taking all that into account here is my game plan:

Monday: BBQ Birthday Party

We attended a birthday party BBQ at a local park.  Actually we wound up eating pizza because it rained and they couldn’t keep the charcoal lit.  Regardless, everyone had a good time.

Tuesday: Chicken and Vegetable Curry with Potatoes

I made my basic “This and That” Curry.  It uses commercially prepared curry “cubes and then a mismash of vegetables & meats.  I used up the chicken that had failed to seal in the canner, and then fresh zucchini, radish pods, peas, beets and carrots from the garden.  I had a couple of potatoes sitting on the counter so I peeled, cubed and cooked them (in the microwave) then added them in as the starch.

Wednesday: Breakfast for Dinner~Pancakes and Bacon

Yankee Bill is at pool and I’ll be out with the kiddos running errands most of the day.  I know from long experience that after a day like that I don’t feel like doing an involved meal.  Pancakes are super easy and the kids love them.  I’ll do a bit of bacon for the side (from our 1/2 pig we purchase).

Since this is my meal plan, I chose to consider the bacon a condiment rather than a meat and therefore will consider this a “meatless” meal for the week.

Thursday:  Pizza

We won’t have pizza on Friday because of the party, so I’ll make it on Thursday, using my Pizza Hut Crust Clone recipe, of course.

Friday: Bill’s Birthday BBQ~Brats, Burgers & Beer 🙂

We are providing meat & soft drinks, everyone is bringing a dish to pass–so it will be a food filled day.

Saturday:  BBQ Leftovers

You know and I know that there will be food left over after a BBQ–so I’ll just plan on having some sort of configuration of that on Saturday.

Sunday: Grilled Shrimp and Grilled Veggies with Rice

I’ll defrost the shrimp, marinate in some teriyaki, and grill.  For veggies we can grill the squash etc and serve it all over rice

This is my fish meal for the week.

So not so hot on the meal goals this week.  No venison. No soup. No bean.  Oh well-some weeks it is easier than others.
