Menu Plan 1/24 ~ Barely There

Snowy Menu Plan MondayWell, I’m heading off to the Blissdom blogger’s conference in Nashville TN tomorrow.  I was chosen to be one of 4 women who will be speaking to the special trials, tribulations and techniques that Frugal Living bloggers have during the “Wisdom Workshops” on Wednesday.  My most excellent co-panelists are Jen from Balancing Beauty and Bedlam, Heather of Inexpensively and Kelly from Faithful Provisions.  If you haven’t visited these fantastic blogs, I suggest you do as soon as possible 🙂

As always when I travel, I am at the point where frugality meets reality.  It may not be super frugal to leave storebought premade meals instead of raw ingredients-but it is still more frugal than Yankee Bill taking the kids out to eat after a long day of work rather than facing the challenge of the stove.

So my menu plan this week consists of today, tomorrow and Sunday.

Monday:  Spaghetti Carbonara & Green Salad

I wound up frying a whole package of bacon on Sunday-we were all in the mood for a bit of bacon on our lunch sandwiches and I had some that had been purchased for $.99 a while back.  Rather than leave half of it sitting in the luncheon meat drawer raw, I planned ahead and fried it all up.  The “extra” bacon will be used in tonight’s Spaghetti Carbonara.

Tuesday:  Crockpot Chicken & Vegetables with Rice

I fly out on Tuesday, and I like to leave a meal simmering in the crockpot so it’s ready to serve when Yankee Bill and the kids get home.  This is a super easy throw it together crockpot meal fits the bill-plus since I stocked up on fairly inexpensive boneless skinless chicken breasts for the freezer a few weeks back I have all the ingredients on hand.  I’ll even get the rice cooker set up so all hubs needs to do when he gets home is turn it on.

Wednesday, Thursday, Friday and Saturday: Dealers choice between a mish-mash of frozen meals to include shrimp stirfry in a bag and Peirogies (Aldi’s brands) Banquet frozen TV Dinners (Salsbury Steak or Chicken Nuggets) and Frozen Pizza along with an assortment of frozen and canned veggies.

Sunday:  Tuna Casserole, Canned Carrots & Biscuits

Filling and easy-just the way to go after a long trip 🙂

    I second Travis have a great time at the conference! My menu this week will be interesting as we are making higher dietary changes in my home immediately. Lower sugar is on the menu! This means dessert once a week and higher amounts of fruits and veggies! My kids enjoy a dessert, but it has gotten out of hand since the holidays!
