Menu Plan 1/11

mpm-1Welcome to another crisp, cold week!

The menu plan this week doesn’t have to take too much into account. We do have the regular 2 weekly sessions of Wrestling for Princess-which means I have to be able to feed her by about 4:30 so she can be at wrestling at 6 (she can’t wait till after, and you don’t want to eat too soon before people are going to jam a shoulder in your stomach). I also have a meeting on Thursday-but it is late enough that I can eat with the family.

As always, I try to make my menu using items I have already purchased on sale.  That’s just one of the ways I try to stay frugal and within my budget!

Monday: “Pizza” Pasta Bake

Yankee Bill won’t be home for supper tonight-so I wanted something quick and easy that I could toss together for the kids-I’ll be eating something else after my meeting from the “more weight conscious” selections in my freezer. I’ll make a smaller batch of this casserole-and there still should be plenty left to send in for lunches later.

Tuesday: Split Pea Soup & Bread

There is a ham bone left from the Christmas Eve Ham. No worries about the safety of leftovers, I stuck it in the freezer 🙂 I’ll just pop that in the crockpot in the morning and have a lovely pot of soup by evening. Have I mentioned lately how much I love my crockpot??

Wednesday: Baked Chicken Breast, Mashed Potatoes & Green Beans

I bought chicken breast on sale last week-and I need to have cooked chicken for the chicken chili I’m making for our party on Saturday. This way I can do up a large batch and have enough for Wednesday’s meal, my party on Saturday and hopefully a bit to freeze.

Thursday: Hunter’s Pie & Rolls

The leftover mashed potatoes will be used up on this “Shepard’s Pie” that uses Venison instead of beef. Yummy comfort food-and again I’ll try to make double and freeze one for later.

Friday: Pizza

Using my Pizza Hut Crust Clone, of course. Would you expect anything different?

Saturday: Wendy’s Chili Clone & Chicken Chili Blanco with Cornbread

We are hosting our American Legion Riders club post Christmas “Blah’s” party on Saturday. Yankee Bill & I will provide both Wendy’s Chili Clone & Chicken Chili Blanco, Cornbread and chili toppings (cheese, sour cream etc). Everyone else is bringing side dishes, appetizers & desert to pass. It should be a rocking time!

Sunday:Leftovers

Heck, I’ll be tired from cleaning up after the party. Plus there will probably be a ton of food leftover! Using it up is very frugal.

    What kind of success do you have with freezing cooked chicken? Of course I have a ton of raw chicken in the freezer, and I have frozen casseroles with cooked chicken, but I’ve never frozen cooked chicken by itself. Do you follow any specific steps so it doesn’t dry out?
