Last Saturday I wound up going shopping with a girlfriend (I only picked up the sneakers I had ordered to replace my old ones and bought some shoe shelves I had been looking for). We went out for dinner together. Yankee Bill took our kiddos over to a friends for a BBQ. On Sunday I had a very nice Mother’s day-but didn’t feel like cooking dinner. We had grilled cheese and tomato soup. So that was 2 meals from last week that I didn’t use up.
Monday: Ginger Fish, Rice, Stirfried Veggies
This was what was on the menu for last Saturday. This used up the last package of frozen fish I had purchased at Aldis-but not to worry, my lovely SIL brought over some trout her husband had caught (he loves to fish but doesn’t like to eat it!). So I’ve got fish in the freezer again. The rice was the last of my 25lb bag (need to hit the Asian grocery next time I’m in town) mixed with some brown rice to stretch it out. And the veggies were 1/4 of a leftover cabbage, 1 yellow squash, a couple of carrots, 1/2 a large onion and a couple of florettes of a yellowing broccoli. They were really yummy and there is plenty left over for my lunch today.
Tuesday: Ham, Rice, Greens, Popovers
Since I didn’t really cook on Sunday (grilled cheese doesn’t count as cooking in my book) I’ll conveniently pop that menu in here! I did change the potatoes to rice-I still have quite a bit left from Monday’s meal. The greens will be plantain from the yard-I’ve been dying to try that. And the Popovers are the recipe I linked to last week. I’m glad that the rice is done and the ham just needs to be heated, because the popovers are really one of those things that need to be made right before serving.
Wednesday: Spaghetti and Venison Meatballs, Salad, Garlic Breadsticks
We’ve got plenty of packages of Venison Meatballs in the freezer, and I’ve always got cans of sauce and dry noodles on hand (although they could wind up being a different shape). For the breadsticks I’m just going to make my pizza dough recipe in the breadmaker with some extra garlic added, then roll it out in a 9X13 cookie sheet and cut into strips. When it comes out of the oven I’ll brush with a bit of melted garlic butter. I’ve never done it before but I don’t see any reason why it shouldn’t be yummy. If I’ve got the time and inclination I’ll make a couple of extra batches of dough and par-baking then freezing a couple of crusts for Friday.
Thursday: Lentil Casserole, Bread, Green Beans, Rhubarb Cobbler
I’ve been trying to work that meatless meal into the menu every week. This Lentil Casserole from Home Ec 101 looked pretty good, so I’ll try it! I might add some brown gravy to go over it. The bread is from my Monday bread baking, the green beans are from last summer still in the freezer (if I can unearth them) and the cobbler is from a friends Rhubarb plant.
Friday: Pizza, or maybe Stromboli
If I get bored with the pizza, I’ll roll it up and call it stromboli!
Saturday: Fried Rice
Saturday is our Poker Run for the American Legion Riders, so it will be a busy day. By the end I’ll probably be happy just to throw together a quick fried rice out of all the leftovers from the week (hopefully a tad of ham, some greenbeans and greens, a bit of the rice with extra added. I can even throw any leftover green salad in there and cook it up).
Sunday: Enchilada Casserole, Corn Bread, Refried Beans
I had this on the menu a few weeks ago and it never happened. I have a stack of small corn tortillas I need to use up, and a few cans of enchilada sauce in the cupboard. I also always have the fixings for corn bread on hand-and with Princess’s love of bean burritos there is usually a can of Aldi’s brand fat free refried beans in the cupboard.
